All of you who were lucky enough to try this bread earlier know what I’m talking about, and for all of you who want to try it for the first time, I recommend that you stay on this page and learn about it.
Senorita bread, aka. Spanish bread, is known in the Philippines as a popular afternoon snack. This type of bread is shaped like rolls and filled with a delicious combo of melted butter, sugar, and breadcrumbs.
Although the ingredients are very simple, I was truly amazed at the results. I never thought something so simple could be so good.

Here are the ingredients you need:
- Milk – For this recipe, I went with plain milk. If you follow a dairy-free diet, you can use almond milk. This recipe will work great with soy milk too.
- Caster sugar – Caster sugar is ideal for baking. Its fine texture allows it to dissolve better than granulated sugar. Caster sugar is ideal for baking because it prevents your baked goods from having a gritty texture. If you have only granulated sugar, you can use it too, but I suggest you process it briefly in the food processor first.
- Yeast – Now, yeast is very important. Not only does it give fluffiness to your dough, but it also gives a nice flavor. It is very subtle, but dough without yeast lacks something, and that is that yeasty flavor. Make sure your yeast is fresh, otherwise your dough will not rise properly.
- Flour – For this recipe, use bread flour. This type of bread flour has a higher protein content than all-purpose flour which tends to activate gluten formation. If you use another type of flour, like all-purpose flour, your dough may be stickier, and in that case, add a few more tablespoons of flour.
- Butter – If you follow a vegan diet, you can use vegan butter. The butter has an important role because it makes your dough smooth and rich. It is also what will be used for the filling.
- Brown sugar – You can use light or dark. The color of the sugar will impact your filling color, making it lighter or darker. I went with dark brown sugar to create more contrast between dough and filling.
- Breadcrumbs – Breadcrumbs are a humble ingredient but they are the exact ingredient that makes this bread so special. They give a unique crunchy texture that separates this type of roll from cinnamon rolls.
How To Serve Senorita Bread
Senorita bread can be served alone as a delicious snack, as brunch, or with some spread. I like to enjoy senorita bread with some fruit tea.
I also must mention you will not be able to eat just one. Senorita bread is very soft with the most delicious filling that pairs with many spreads, so make sure to try it, and of course, it works great on its own too.
Tips For Making Senorita Bread
Make sure your milk is warmed at the right temperature; yeast is very sensitive and it will die at 138°F.
The ideal temperature is between 105-110°F. If you do not have a cooking thermometer, you can do a finger test.
Just make sure your fingers are clean. Our bodies are 98°F, so the milk should feel warm to the touch but not hot. Also, do not forget to feed the yeast with sugar at this point.
Even with the right rising temperature, this bread will fail if the dough does not rise well. The ideal spot to proof dough is your warm kitchen counter. Still, if your kitchen is not hot enough, you can heat your oven to 200°F.
Cover your dough with a damp towel and place it in a preheated oven. Turn the oven off. After about an hour, your dough should be doubled in size. If not, give it another 30 minutes.

Ingredients
For the rolls:
- 1 cup milk, warmed
- ¼ cup caster sugar
- 2 tsp yeast
- 3 cups bread flour
- ¼ cup butter, melted
- ½ tsp salt
For the filling:
- ½ cup dark brown sugar
- ½ cup butter
- 3 tbsp milk
- 2 tsp flour
- ½ cup breadcrumbs, plain not panko
For the coating:
- ¼ cup melted butter
- ½ cup breadcrumbs, plain not panko
Instructions
1. To make the dough, in a small bowl, combine yeast, 1 tsp sugar, and ¼ cup milk. Let the yeast develop for 10 minutes.
2. In a mixing bowl, combine bread flour, and salt.
3. Fold in milk, yeast, and melted butter. Stir the dough until it comes together. Transfer the dough onto a lightly floured kitchen surface and knead until smooth. You can mix the dough in a stand mixer with the dough hooks attached.
4. Cover the dough and let it rise for 1 ½ hour or until doubled in size.
5. To make the filling, melt the butter with sugar in a sauce pot.
6. Bring the mixture to a simmer and cook until the sugar is dissolved. Stir in milk, flour, and breadcrumbs. Cook until the mixture thickens.
7. Preheat the oven to 325°F. Line two baking sheets with parchment paper.
8. Punch down the dough and divide it into two equal parts.
9. Roll each part into a log shape and cut each into 8 pieces.
10. Roll each piece to a 3×5-inch rectangle or close to a rectangle.
11. Spread a tablespoon of the filling over the dough. Roll the dough into a bread roll and place on a baking sheet, seam side down.
12. Let the dough rest for another 30 minutes.
13. Brush the dough with melted butter and sprinkle with breadcrumbs.
14. Bake the rolls for 20-22 minutes.
15. Cool briefly before serving.
