Quick and Easy Rice Noodle Ramen

When it comes to comfort food, ramen ranks high. What is not to love about this delicious mixture of ramen noodles swimming in rich, savory broth?

Ramen is one of the coziest foods to me, because of all the delicious ingredients ramen has. This recipe is classic ramen, but with a twist! I am sure you will love it.

The classic noodles used for the ramen are wheat noodles, but I wanted to make these with rice noodles, just to give a different flavor to all.

Rice noodles are not commonly used in Asian cuisine for ramen; the most popular noodles for ramen are soba, somen, and udon.

Should You Buy or Make Ramen Noodle Soup?

Ramen noodle soup is the very definition of instant gratification. The store-bought noodles make ramen super easy to make, but what if we miss something special with this easy cooking?

The instant ramen soup is instant, but nothing compares to the homemade version. The homemade version is an amped-up version using the rice ramen noodles, with our homemade additions.

I like adding some fresh veggies, hardboiled eggs, delicious shiitake mushrooms, and crunchy black sesame seeds for the amped-up ramen noodles.

Of course, you can add all of this to the store-bought version, but the real flavors come from the delicious broth I use as a base. Ready to learn why it’s important to have a good base for your ramen?

How to Make a Flavorful Broth

Sometimes the craving for ramen comes with a desire to make it at home — and not just from a Styrofoam cup. I’m talking about homemade ramen that is rich and satisfying and can go hand in hand with the best restaurant ramen.

People usually avoid making broth as they believe they need a 12-hour cooking process and a plethora of bones, but for me, the best broth starts with chicken wings and only needs a few hours. 

Most people usually just toss the chicken into the water and expect a miracle to happen. You will get a broth, but it will not be delicious as this one!

To make a super delicious ramen broth, there is a special tip, and it is to prepare the wings before cooking. Here’s how to make my favorite chicken stock for ramen!

To make a great broth you will need:

  • Chicken wings
  • Herbs and spices
  • Carrots 
  • Garlic 

Here is how to prepare the chicken wings and make the broth:

  1. To have a good broth base, preheat your oven to 425°F.
  2. Place the chicken wings in a roasting dish, then roast for 30 minutes or until well-browned.
  3. Reduce the heat to 375°F, add carrots, and roast for another 20 minutes.
  4. Transfer the chicken and carrots to a saucepot. Pour some water into the roasting pan and carefully scrape any browned bits.
  5. Add that mixture into the saucepot with the chicken and carrots. Add some garlic and ginger.
  6. Heat to just above boiling and then reduce heat to simmer for 3 hours.
  7. Strain the stock and use it as desired.

Roasting chicken or any other kind of base (ex. beef bones) will ensure you have plenty of flavors. 

Now obviously, this broth doesn’t exactly fall under the “quick and easy” category. And that’s okay! The quick and easy recipe is just below for when you don’t have time to mess around with chicken wings. Let’s get you some ramen!

How to Turn Broth into a Base for Ramen

The chicken stock you make is a blank slate for adding the rest of the flavors. You can add in dried shiitake or desired type of mushrooms, kombu, or mirin

Once you added your desired ingredients, you will have a perfect ramen base. This is the secret to making the perfect ramen soup!

Putting it all together:

  • Broth. You can make your broth in advance. If you want, you can even make larger batches and pop them in a freezer. Just for a note, make sure to thaw and boil the broth before adding ramen.
  • Noodles. Use rice ramen noodles, instead plain wheat noodles. Boiling ramen noodles in a broth may result in gummy noodles. Instead, cook them separately in water, then add them to bowls filled with broth.
  • Toppings. If you are using plain broth or a store-bought version, then you can add rich toppings, like pork belly, but with a broth that is as rich as this one, you can choose simple ones, like shiitake mushrooms, carrots, and hardboiled eggs.

Pro Tip: My friend told me once she always eats the eggs first, especially with ramen that has spicy sauce in it. According to her, eggs keep your stomach safe from spicy food! I’m no egg expert, but why not?

Quick and Easy Rice Noodle Ramen

Preparation time: 5 minutes

Cooking time: 10 minutes

Servings: 2

Ingredients:

  • 2 packages of rice ramen noodles, white or brown
  • 2 eggs, boiled
  • 2 cloves garlic, sliced or minced
  • 1 jalapeno pepper, sliced (remove seeds for less heat)
  • 1 carrot, cut into matchsticks
  • 1 tsp minced ginger (if using)
  • 4 shiitake mushrooms
  • Sliced green onions
  • Black sesame seeds
  • ½ tbsp sesame oil
  • 1 tbsp soy sauce
  • ½ tbsp rice vinegar
  • ½ tbsp hot or Sriracha sauce
  • 1 tsp brown sugar
  • Salt and pepper, to taste
  • 4 cups chicken broth

Instructions:

1. Heat half the sesame oil in a saucepot.

2. Add garlic, jalapenos, and ginger if using. Cook over medium heat, stirring, until fragrant.

3. Add the carrots (save a few for garnish), stock, soy sauce, rice vinegar, Sriracha, brown sugar, salt, and pepper, to taste.

4. Simmer the broth until the carrots are almost tender.

5. In the meantime, cook the rice noodles in water, according to the package directions. Cook the shiitake mushrooms in a skillet until tender.

6. Add the noodles into the broth and remove the saucepot from the heat. 

7. Ladle noodles into the bowl, and top with remaining carrots, sliced green onions, and shiitake mushrooms.

8. Add hardboiled eggs, then sprinkle black sesame seeds before serving.
