Marshmallow Cookies
Let’s face it; chocolate chip cookies are the best cookies in the world. Nothing can compare to these in the terms of flavor or texture.
I made countless chocolate chip cookies in my life. Recently, I started to think what else can be added to chocolate chip cookies.
I found so many great recipes, but one really caught my eye: marshmallow cookies.
These cookies are not hard to make, but every step needs to be timed absolutely perfectly. When making anything with ingredients as melty as marshmallows, you know you have to respect every step.
These cookies have excellent texture – a mix of cookies and brownies. There is some crinkling and a wonderful chewy inside. During baking the marshmallows will brown a bit, creating a lovely crispy outside.
Once you try them, you will notice they have a hot-chocolate-like flavor, but in cookie form.
How Are Marshmallows Made?
Marshmallows are light, sweet, and fluffy wonders that inspire happiness. Marshmallows start with cooked and dissolved sugar, gelatin, water, and intense whipping that pushes air into little pockets in the sugar solution.
There are two types of marshmallows: the American and European versions. The jet-puffed marshmallows we cook while camping are the American marshmallows.
They contain one additional ingredient and that is corn syrup. The corn syrup is the reason why they are so stable, spongy, and perfectly melty
The European marshmallows are better for eating straight and have a denser consistency.
Our friends over the pond make their marshmallows like a meringue that gets stabilized with gelatin. It’s the basic marshmallow whipping process, without corn syrup.
Choosing The Right Marshmallows
You can choose any marshmallows you like. White, pink, colorful – whatever works! But when it comes to their size, always go with smaller marshmallows.
If you do have big ones, you can snip toff smaller pieces with kitchen scissors. I do that sometimes.
Preventing The Marshmallows From Melting
Marshmallows will melt, as you know. Even by their appearance you can tell they are not heat-proof. So how to keep the marshmallows in the cookies?
When preparing the cookie dough for the cookies, you can incorporate marshmallows two ways:
- Add them into the cookie dough – When your cookie dough is almost combined, add the marshmallows. Shape the dough into the balls and tuck in any peeking marshmallow.
- Add them to a cookie dough ball – Shape the ball out from the cookie dough and flatten it between palms. Place few marshmallows in the center and re-shape the ball.
You really should wrap those marshmallows because if they stick out, they will grow, and puff, and finally just melt and burn.
Be very careful with the marshmallows at the bottom of the cookies. It happened to me once that the marshmallows melted and I got a burnt sugar crust under my cookies. Not a pleasant experience.
Can I Make These Cookies Vegan?
With a few ingredients swap you can turn these cookies into a vegan delicacy. Here is how to swap the ingredients:
- The butter – Instead of a real butter, use vegan butter or margarine. You can also use the coconut oil if you do not have an issue with the coconut flavor in your cookies.
- The eggs – You can use ¼ cup of apple sauce to substitute the egg, or just go with ¼ cup of plant-based yogurt.
- The chocolate – This is the easy swap. Choose quality vegan dark chocolate without any dairy.
- The sugar – You can use maple syrup, date syrup, or coconut sugar.
- The marshmallows – You can find vegan marshmallows without any gelatin. Also, there are brands that also make these without corn syrup.
Do I Have To Add Cacao?
I made these cookies with chopped chocolate, but also added cacao. I used colorful and fun marshmallows and just wanted to show their colors. You can make the cookies without cacao.
In that case, just make sure you add +1 tbsp of the flour into your cookie dough. I do advise you to add the cacao because you will get brownie-like cookies that are a bit different from the plain ones (and on the good side).
Marshmallow Cookies

Yield: 12 cookies
Ingredients
- 1/3 cup butter
- 6 oz chopped chocolate, divided
- 2 tbsp cacao powder
- ¾ cup sugar
- ¾ cup flour
- 1 egg
- ½ tsp baking powder
- ½ tsp vanilla extract
- 1/3 cup mini marshmallows
Instructions
1. Preheat oven to 350°F.
2. Melt half the chocolate in a microwave safe bowl.
3. Place the butter in a mixing bowl, and drizzle over the melted chocolate.
4. Beat until well combined.
5. Add egg, sugar, and vanilla. Beat until fluffy. Fold in flour, baking powder, and cacao.
6. Stir until the mixture just comes together.
7. Fold in chopped chocolate, and marshmallows.
8. Shape the cookie dough in a balls and arrange these on a baking sheet. Press them gently to flatten and bake for 10-12 minutes.
9. Cool on a wire rack completely before serving.
