Keto Gravy

This easy Keto gravy is done in five minutes and with only five ingredients. It is ideal to serve with mashed cauliflower, turkey, beef, or chicken, and it elevates every dish.

You will love how quickly this delicious gravy comes together. The flavor of the gravy is not overpowering, which makes it an ideal addition to your meatloaf or baked turkey.

With this gravy, you can now easily enjoy your Keto diet meals with something special on top!

What Is Keto Gravy?

Keto gravy, unlike other gravies out there, has no flour in it.

As you know, the Keto diet works around low-carb and high-fat ingredients. Plain flour is known as an ingredient that is high in carbs and therefore not welcomed in the Keto diet.

Besides flour, many gravies use cornstarch, and again, that is another high-carb ingredient. Making a gravy without something that will thicken it does not result in a quality gravy.

So, what is the solution? The solution is to use xanthan gum. The xanthan gum will thicken gravy just like the flour or cornstarch does in classic recipes.ย 

This gravy has three major components: broth, butter, and xanthan gum. Besides these main ingredients, there are also onions and garlic powder. You can also toss in some herbs, just to give extra flavor, and my favorite is thyme.ย 

Besides beef broth, you can use chicken stock, or even better โ€“ the meat drippings. Whenever you have some drippings, you can turn them into a wonderful and flavorful gravy, but for now, let us stick with beef broth.ย 

How To Add Xanthan Gum

Xanthan gum cannot be added at any stage of your gravy making.

If you add it to warm ingredients, the xanthan gum will just clump together, leaving your gravy thin with nasty white lumps. The trick is to add the xanthan gum to cold ingredients.

So, make sure your beef broth is cold before adding the xanthan gum. Also note that the gravy should be warmed slowly so the xanthan gum has time to nicely react and thicken your gravy into a silky-smooth concoction.ย 

How To Store Leftover Gravy

I am pretty sure you will use all the gravy because it is so delicious, but just in case you decide to make more, here is how to store it properly. Leftover gravy is like liquid gold, and not a single drop should be wasted.

Sadly, gravy is quite a perishable ingredient. It will last for two days only in the refrigerator. Luckily, the life shelf of gravy can be extended thanks to the freezer.

Place any leftover gravy in a zip-lock bag, flatten it and store it in a fridge for up to a month. You can also freeze the gravy in ice cube trays and use just a little of it at a time.

To reheat the gravy, just pop it out and reheat it in a microwave or over the stove.

Tips For The Best Keto Gravy

There are a couple of tips that you must know because they will help to make the perfect Keto gravy:

  • Before you start, make sure you are using cold ingredients. The most important thing is that your broth is cold. If the broth is not cold, then the xanthan gum will clump and ruin your gravy.
  • For this gravy, you can use beef broth, but others will work too – turkey, chicken, or even vegetable. If you want, you can make your gravy with drippings or add some drippings to enhance the flavor.ย 
  • If you are using drippings, make sure they come to room temperature. As the drippings have an intense flavor, you may want to consider adding some water.
  • For a perfectly smooth gravy, you can strain it through a fine-mesh sieve after cooking.

Ingredients

  • 2 cups beef broth
  • 3 tbsp butter
  • 1 tsp xanthan gum
  • ยผ tsp garlic powder
  • ยผ tsp onion powder
  • Salt and black pepper, to taste
  • Thyme or desired herbs, optional

Instructions

1. In a sauce pot, combine beef broth with xanthan gum, garlic powder, and onion powder.

2. Add butter.

3. Set the sauce pot over medium-high heat. Bring your gravy to a boil and cook, whisking for 1 minute.

4. Adjust the seasoning and serve gravy as desired.
