Gooey Mozzarella Queso Dip

Mozzarella queso dip is the best creamy queso you can ever make! This dip is a simple mixture of mozzarella and white American cheese, all topped with fresh chives and pepper.

Who would have known these few simple ingredients could create such a delightful dip?

Ready in just 10 minutes, it is the perfect dip to serve with tortilla chips, pita, or veggies. 

What Makes This Dip So Special?

I am a huge fan of so many different recipes, but my favorite ones are those that are ready in 10 minutes or less.

This recipe is one that you can make in 10 minutes and with simple ingredients, so it’s no wonder why I recommend it to all my friends, and now to you!

The texture of the dip is just perfect – the combination of the cheeses makes this recipe clump-free and silky.

Another benefit of this recipe is that once it cools down, you can reheat it again and it will become silky again. It’s just one of those recipes you can’t go wrong with!

Which Ingredients To Choose

In some recipes, you can swap ingredients without compromising the texture, but in some, you have to follow the recipe strictly. This one should be followed as it is written if you want a perfect dip. 

You may think that you can swap ingredients or use cheese with less fat, but in that case, I cannot guarantee perfect results.

Mozzarella Cheese

Always use whole milk mozzarella cheese. This one will ensure you have a perfectly stringy cheese dip. You can use mozzarella from a block or a ball of mozzarella, as long as it is whole milk.

American Cheese

I prefer to use white American cheese for this recipe. Good American cheese is made from very young cheddar or Colby and does not contain loads of additives.

You can grate the cheese or just cut it into small cubes. It will melt perfectly in any case. 

Milk

Whole milk is super creamy and stands up very well to heat.

I do not have anything against low-fat milk, but a few times due to overheating, my low-fat milk curdled and destroyed my cheese dip. If you only have low-fat milk, make sure you do not overheat it. 

Chives

The chives are not necessary for this recipe, but they do give a mild onion flavor that goes well with dairy and adds some dimension and color to the dish.

What Else Can I Add?

This recipe does allow you some changes, but just in terms of spices. Here are some of my favorite spices and add-ins:

  • Shallots – Just like chives, shallots give a mild onion flavor. You can add shallots to a dry sauce pot and just cook briefly until they release their flavors.
  • Cumin – Just a pinch of cumin will elevate your queso dip to another level. 
  • Chopped jalapeno or salsa – This will give a spicy kick to your queso dip and is great if you like spicy food.

My Special Tips

This recipe is very easy to make, but here are some things to have in mind:

  • Make sure you follow instructions to avoid a clumpy mess. As mentioned earlier, if you are using low-fat dairy products, do not overheat them, as they may curdle
  • Invest in a cheese grater. Nicely grated cheese will allow the queso to melt properly. You can grate both kinds of cheese, American and mozzarella. 

Can I Use Other Types Of Cheese?

I strongly advise you to stick with American cheese. The other types of cheese do not have the same texture. For instance, cheddar will not melt the same in the queso recipe and you will get a clumpy mess.

You can use something else instead of mozzarella, such as Oaxaca cheese, but in that case, the recipe is no longer mozzarella queso dip.

The mozzarella in this recipe is here for a reason. American cheese will give a super smooth and creamy texture, while mozzarella gives a melty, stringy cheese texture. Together, they are perfect for queso.

Ingredients:

  • 0.5 lb American cheese, cubed or grated
  • 0.3 lb mozzarella cheese
  • 2/3 cup whole milk
  • Salt and pepper, to taste
  • 1 tbsp chopped chives
  • Cumin, if desired

Instructions:

1. Grate cheeses or just cut them into small cubes.

2. Heat milk in a sauce pot, until it starts to simmer.

3. Add both types of cheese and season to taste with salt and pepper.

4. Lower the heat and stir the mixture until it is smooth.

5. Once the cheese is smooth, you can add any add-ins you like – cumin, jalapenos, or salsa.

6. Serve the cheese dip immediately, topped with chopped chives.
