Just Egg French Toast
French toast is everyone’s favorite sweet breakfast, and nothing is more disappointing than not being able to have it because you can’t have eggs.
So, I present to you a French toast recipe using Just Egg plant based scrambled eggs! You won’t even notice a difference, I promise!
Just Egg is a plant based alternative to eggs using mung beans, and surprisingly, it cooks exactly like eggs do! Such a great replacement for someone who has an egg allergy or wants to cut down on cholesterol.
The steps for this recipe are exactly the same as regular egg French toast, you are just replacing it with a cup of Just Egg. I used a plant based milk as well, but you can use any milk you would like, whether it’s dairy free or actual milk.
This is a great recipe for a special weekend brunch, but it’s also quick enough if you want it for a fast breakfast before going to work or school.
It only takes 15 minutes to whip up this delicious recipe, after all. I love pairing French toast with bacon or sausage to make it a complete breakfast too.
For this recipe, you will need a shallow bowl or container and a skillet of some kind (we recommend taking a look at this pre-seasoned cast iron one from Amazon if you don’t have a quality skillet).
What Kind Of Bread To Use
I used a day-old loaf of brioche bread. It has a subtle sweet flavor and a chewy texture – it’s absolutely delicious! I recommend using older bread because it doesn’t get quite as soggy and it holds up its texture quite nicely.
What Is Just Egg?
Just Egg is a plant-based “egg” mixture that’s made from mung beans. It cooks up just the same as actual eggs, and it makes the perfect replacement for eggs in this recipe.
Can I Use A Different Milk Than Almond?
I used almond milk in this recipe because that’s what I had in my fridge at the time, but you can use any non-dairy milk you would like!
Oat milk would also be great in this recipe. Using vanilla flavored milk added some great flavor, so I would suggest finding one with vanilla if you can.
What Toppings Should I Use?
You can’t go wrong with classic maple syrup and berries, but feel free to get creative with it! Next time, I might try topping it with peanut butter or coconut whipped cream.
What Else Should I Serve With This Recipe?
I would definitely add some vegan bacon or sausage for protein – that way, it’s a full breakfast! Adding the protein will also help keep your blood sugar balanced.
How Long Will This Recipe Keep For?
While I wouldn’t suggest saving leftover French toast because it will be too soggy, making the batter for the French toast the night before is a great idea.
All you’ll have to do is whisk it up really quick the next morning, and you can get right to cooking your French toast!
Just Egg French Toast Recipe

Ingredients
- 1 cup of Just Egg plant based scrambled eggs
- 1 loaf of day old brioche bread
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- ½ cup non dairy milk, I used almond milk
Instructions
1. Slice the bread if it isn’t already pre sliced.
2. Add the Just Egg, milk, vanilla, and sugar to a shallow and wide bowl or container and whisk with a fork until you have a smooth mix.
3. Heat a skillet over medium heat and add the coconut oil.
4. Once the skillet is hot, dip both sides of the bread slices into the egg batter and add them to the skillet. Cook on one side until it is golden brown, about five minutes, then flip and repeat.
5. Serve the french toast on a plate and add your favorite toppings. Enjoy!
