Ube Brownies
One ingredient I started using recently is ube. I love how it tastes in desserts, and the color… it elevates any dessert and turns it into a beautiful purple spectacle!
At the beginning of this month, I set my goal to use ube more in my recipes. So what other way to start than brownies?
Brownies are the easiest dessert you can make, and they are the ultimate crowd pleaser!
Ube brownies are perfect for family gatherings, but also for any party. They just have the perfect flavor and appearance and will attract anyone. If you are interested in making these brownies, the recipe is just below.
What Is Ube?
Ube jam is a Filipino dessert made with purple yams, coconut milk, and butter. The ube halaya jam can be eaten as a snack or used in various desserts.
There are so many amazing recipes you can make using this ingredient, and these brownies are a perfect start.
When it comes to availability, ube jam can be found in a local Filipino grocery store, but if not, then you can get one online or make it at home!
What Does Ube Taste Like?
After many uses of ube, in desserts and as a snack, it is still hard for me to describe the flavor of ube because it is so unique and does not taste like anything I’ve have tried.
With that said, I’ve obviously got to try and describe it! I’m going to go with… mild and sweet. Kind of like regular sweet potatoes? But slightly earthier, with balancing notes of vanilla, white chocolate, and pistachio.

Luckily, ube has gone mainstream in these past years and you can try lots of ube-flavored desserts and decide whether you like the ube flavor or not.
How To Make Ube Jam

Ingredients
- 2 cups grated ube
- 14 oz condensed milk
- 13 oz coconut milk
- 12 oz evaporated milk
- ½ cup butter
- 1 cup sugar
- 1 cup of American processed cheese
- (Optional) 2-3 drops ube extract
Instructions
1. In a large saucepot, combine grated ube, condensed milk, coconut milk, evaporated milk, butter, and sugar. Bring to a boil, stirring occasionally until sugar is dissolved.
2. Add ube extract if you are using some (not more than 2-3 drops). Reduce heat and cook, stirring for 30 minutes or until sticky dough-like mixture forms.
3. Stir in American processed cheese and cook for another 10-15 minutes until the cheese is melted.
4. Spoon ube jam into jars and allow the temperature to cool down before storing.

How To Make Ube Brownies
There are so many things I love about this recipe.
First off, this is a one-bowl recipe — the easiest type of recipe that doesn’t require anything other than a bowl to make! You don’t need any fancy equipment; you can combine everything by hand. You don’t even need a mixer!
Next, it’s made with real ube — a lot of other recipes use only ube extract to flavor the classic blondies or use a very small amount of ube jam. This recipe is rich with ube flavor thanks to the large amount of ube jam it uses!
And finally, the brownies look amazing — there is something spectacular in their appearance. It is just a perfect combination of purple brownies and white chocolate.
Ube Brownies
Preparation time: 10 minutes
Cooking time: 30 minutes
Servings: 12 brownies
Ingredients
- 1 cup sugar
- ¼ cup muscovado sugar
- 1 cup unsalted butter, melted
- 2 small eggs
- 2 cups ube jam
- 1 tbsp ube extract
- 2½ cups cake flour
- 1 tsp baking powder
- 1 cup white chocolate chips or chopped chocolate
Instructions
1. Preheat oven to 350°F. Line a 9-inch baking pan with parchment paper.
2. In a bowl, beat butter with sugars and eggs until fluffy.
3. Stir in ube jam and ube extract.
4. Add flour and baking powder and stir until just combined. Finally, stir in ¾ cup of the white chocolate chips or white chocolate.
5. Pour the batter into the baking dish and add the remaining chocolate on top.
6. Bake the brownies for 30 minutes.
7. Cool the brownies in a baking dish before cutting and serving.
Notes
- Muscovado sugar will make your brownies stickier and fudgier than regular granulated sugar will!
- Remember, it is better to underbake than to overbake the ube brownies. Use the baking time in the recipe as a guide and start testing your brownies 10 minutes before the end. Our ovens may be different, and you do not want to end up with dry brownies.
- Use high-quality ube jam — as this is the key ingredient, make sure you use a high-quality one or make your own at home. It is easy to make, and it can be used in so many recipes.
- Don’t overmix the batter; make sure you stir until just blended. Overmixing your brownies after you’ve added your flour will result in dry, crumbly brownies.
- Use proper white chocolate. To be honest, I made a mistake here and used chocolate chips that weren’t very temperature resistant, so when I added white chocolate chips into the batter, they melted right in. Luckily, I added good white chocolate on top and saved them — the flavor was perfect! I did miss the white pieces of chocolate throughout the batter though. So don’t be like me; use baking chocolate chips, not regular ones.
