Sometimes cooking for two just does not feel all that decadent. When you bake a piece of salmon or a chicken, even if it is delicious it might lack some of that luxurious feeling that you can experience when preparing something for a crowd.

Well, these delicious salmon lasagna rolls solve this problem! With some easy-to-find ingredients, you will have a perfect dish for two. 

These salmon lasagna rolls are made with deliciously flaky salmon, spinach, and mascarpone, then enhanced with a delightfully creamy sauce.

This is indulgent lunch or dinner option is just a perfect recipe for two people, without giant baking dishes!

What Makes This Recipe Great

I truly enjoy lasagna, but I love these rolls even more. Why? Making lasagna requires time as you must prepare and assemble all the layers carefully. This recipe simply doesn’t!

With the salmon lasagna rolls, you will easily have a lasagna dish, but in a less complicated way.

Using already cooked and flaked salmon (brilliant use of leftovers) or preparing a fresh fillet is much easier than cooking chicken. Salmon cooks easily, unlike meat and poultry. 

Making Alfredo sauce from the scratch requires time, but if you think you can go around with the jarred Alfredo sauce, please avoid it.

Instead, spend a few extra minutes on this recipe and make a creamy sauce from scratch! It is as simple as melting butter in a saucepan, adding a little garlic and cream, and letting it thicken for a few minutes.

This delicious sauce is very good on these lasagna roll-ups, but any pasta would pair well with it!

How To Bake Salmon

If you already have some leftover salmon, then you can skip this part. If you’re working with a fresh piece of salmon, however, the easiest way to prepare it is in an oven or air fryer!

To bake salmon in the oven:

  1. Preheat the oven to 450°F. Line a baking sheet with parchment paper.
  2. Place salmon on the baking sheet, skin side down. Drizzle it with olive oil and season to taste with salt and pepper.
  3. Bake the salmon for 12-15 minutes, or until it flakes easily. 

To make salmon in the air fryer:

  1. Preheat the air fryer to 400°F. Rub salmon with olive oil and salt and pepper, to taste.
  2. Place the salmon in the air fryer and air fry for 7-9 minutes, depending on the thickness of the salmon.
  3. Once the salmon flakes easily, it is ready to be used. 

Fresh Vs Dry Lasagna Sheets

For this recipe, I went with fresh lasagna sheets. I love fresh lasagna sheets as they are flexible, require no additional cooking, and make the entire process easier. They’re readily available in most stores, too! 

Unlike making classic lasagna, the sheets for the lasagna rolls must be flexible, so you can roll them nicely. If by any chance you cannot find fresh lasagna sheets, you can use dry ones.

Dry lasagna sheets are very firm, so to make them flexible, you will have to cook them before use. Make sure that they’re cooked al dente, and not overcooked!

If you overcook your lasagna sheets, they might fall apart with the additional oven baking — or you will end up with a soggy lasagna. 

Fresh Vs Frozen Spinach

As you will see, I used fresh spinach in this dish. I was not comfortable with the idea of using frozen and thawed spinach because of all the water they might release.

If you do not have fresh spinach, you can use frozen and thawed spinach — just make sure you drain it well! Again, no one wants a soggy lasagna.

Lasagna Vs Lasagna Rolls

Unlike classic lasagna, you don’t have to create layers upon layers when making lasagna rolls. Instead, you just add all ingredients to a lasagna sheet, then roll it up firmly!

We’ll get into more detail below, but all you need to make these lasagna rolls are flaked salmon, spinach, cream cheese filling, and lasagna sheets.

Place the cream cheese filling on a lasagna sheet, followed by fresh spinach and flaked salmon. Roll the lasagna sheet into a roll and place it in a baking pan. Repeat with the remaining ingredients until your baking pan is filled.

Make the Alfredo sauce and pour it over the lasagna rolls. Add some mozzarella cheese to the top and bake until the top is golden and bubbly. Cool briefly before serving.

Ingredients

For the filling:

  • 5 oz salmon fillets
  • 8 oz cream cheese
  • ¼ cup shredded Asiago cheese
  • 2 cups fresh spinach

For the Alfredo sauce:

  • 2 tbsp butter
  • ½ cup heavy cream
  • ½ cup Parmesan cheese, freshly grated
  • 1 small clove of garlic, minced (optional)

Additional:

  • 4 fresh lasagna sheets
  • Oil, for greasing the baking pan

Instructions

1. Prepare the salmon; preheat the oven to 400°F.

2. Place salmon on a parchment paper-lined baking sheet, skin down (if there is skin). Drizzle the salmon with oil and season with salt and pepper (to taste).

3. Bake the salmon for 15 minutes, or until it starts to flake easily.

4. Prepare the Alfredo sauce; melt butter in a saucepot. Add garlic and cook until fragrant. Stir in heavy cream and simmer for 5 minutes, then whisk in Parmesan cheese. Set sauce aside to thicken and cool. 

5. Assemble the rolls; cut the lasagna sheets into 2 equal parts. 

6. Combine cream cheese and Asiago cheese. Spread the cream cheese filling over the lasagna sheets. Add spinach on top, then flaked salmon.

7. Roll the lasagna sheet into rolls and place in a gently greased baking dish, lasagna facing up. Repeat with the remaining ingredients.

8. Pour the Alfredo sauce over the lasagna rolls. Bake the lasagna rolls for 15-20 minutes.

9. Cool briefly before serving.
