These are fun and colorful cookies with Skittles candies that bring a burst of flavor with every bite. 

These cookies will bring a smile to anyone’s face, and they’re the perfect treat for a kid’s birthday party.

They look cute, are bright and colorful, and most importantly, they taste amazing!

What Are Skittles?

Skittles are small, round, chewy candy that comes in many different colors in a bag. Skittles’ tag line is “taste the rainbow” to signify the colorful aspect of the candy.

Skittles are fruit flavored, and unlike their relatives M&Ms, Skittles do not contain chocolate and bring a chewier and more flavorful experience.

Skittles can be bought in so many different flavors, including:

  • The Original Skittles
  • Sweet and Sour Skittles
  • Tropical Skittles
  • Berry Explosion Skittles
  • Yogurt Fruit Skittles
  • Mint Skittles 
  • Many seasonal flavors

The Skittles can be found in any store with ease. They are very popular and even can be bought online. 

Ingredients For The Base

Skittles cookies are made not only with Skittles, but also a delicious cookie base. The base is made with butter, flour, eggs, sugar, and vanilla.

The cookies are very buttery and have the perfect texture. Each bite brings some chewiness from the Skittles candies, and a soft cookie texture. 

Tips for The Perfect Skittles Cookies

When it comes to the world of desserts, cookies are quite simple, but oh boy, they are delicious. Before reaching for the butter and sugar, here are some of my best tips for the perfect cookies. 

  • Shaping the cookies perfectly – These cookies are basic butter cookies, but with some Skittles on them. As the dough is very easy to work with, there are different ways to shape these cookies: with a cookie cutter, with an ice cream scoop, or just by shaping the dough into the log and cutting it. The ideal way to shape cookies is by cutting them out. Roll out the cookie dough to ¼-inch thick and just cut using a cookie cutter. Arrange Skittles on top and press gently. 
  • The perfect weight – Measuring cookie dough as you scoop it will give you consistent cookies, batch after batch. Four ounces of dough is the sweet spot for many cookies, including chocolate chip ones. It will make the cookie large and indulgent, with a balance between chewiness, softness, and crispy edges.
  • Microplane the cookies – I use this method every time my cookies look uneven. This gives them nice and even edges.

Freezing The Cookie Dough

I used to bake my cookies immediately. I made the dough, added the chocolate or candies, shaped them, and just baked. My friend told me she always freezes or chills her cookies before baking.

I did some research and found that cookie dough with butter inside is better to cook after being chilled. As little as 30 minutes in your fridge or freezer will help your cookies brown better and spread less. 

Also, this is handy when adding any chocolate or candies to the cookies. The chilling effect will make your chocolate or candies hold their shape better. 

Can I Add Skittles In The Batter?

I tested two versions: Skittles in the batter and on top of the cookies. I was not so pleased with the version where the Skittles were in the batter.

The Skittles became a bit too hard and were not pleasing to chew. Also, they melted a bit and made a small puddle under some of the cookies.

As I love my cookies to look appealing and neat, I placed Skittles on top of the cookies next time and pressed them in so they stuck better. I loved the results! No puddle and they hold their shape perfectly. 

These cookies are so easy and there is no rocket science here. Everything is just basic and you will have your goodies ready in no time without exerting too much effort.

Skittles Cookies

Preparation time: 15 minutes

Cooking time: 15 minutes

Yield: 12 cookies

Ingredients

  • 1 ½ cup plain flour
  • ½ tsp baking powder
  • ½ cup butter
  • ½ cup sugar
  • ¼ cup brown sugar
  • 1 egg
  • 3 oz original Skittles, or your desired flavor

Instructions

1. Preheat oven to 350°F. 

2. In a bowl, beat butter with sugars until fluffy.

3. Add egg and vanilla.

4. Fold in flour and baking powder. Stir until your mixture is smooth.

5. Shape the dough into 12 portions. Roll each portion into a ball and press gently to flatten.

6. Place Skittles on top of the cookies and pop them in a freezer for 10 minutes.

7. After freezing, bake the cookies for 12-15 minutes.

8. Cool the cookies on a wire rack before serving.
