Protein Mug Cake

You know that “mid afternoon sweet craving but you just got a workout in and don’t want to ruin it” feeling? Well, with this protein powder mug cake, you really can have your cake and eat it too!

This recipe is low in sugar and carbs but comes in with a whopping 25 grams of protein; it really is the perfect post workout treat.

And did I mention that it only takes three minutes to make? I would say it’s too good to be true, but it’s the real deal.  

It’s the perfect chocolatey, fudgy cake. The only equipment you need for this recipe is a small mixing bowl, a microwave safe mug, and a spoon to eat it with. 

Whey Protein

Whey is one of the primary proteins found in dairy. It has a great amount of amino acids that are needed to carry out the functions that protein does in the body, like building muscle and aiding in recovery.

For this recipe, I went with a chocolate whey protein powder, since those are probably the easiest to find. Whey protein usually has the most protein per scoop, which is a plus. It also holds up pretty well to microwaving and heat. 

I really did want to create this recipe without using any flour, but without it, it  just wasn’t the right texture. It would rise almost to the point of exploding in the microwave and then would fall super flat when you would take it out.

It also was a little more liquidy than what I wanted. I went with almond flour because that’s what I had on hand, but you could use any flour you desire. Cassava and oat flours would be great options too. 

What If I Don’t Own A Microwave?

You can bake your mug cake for 12-15 minutes in the oven at 350°F You could also use a muffin tin if you are worried about your mug breaking. 

You could also use the batter and make pancakes as well if you are short on time. 

Can I Use Plant-Based Protein?

Yes, of course! Plant-based protein powders make a great substitute if you are vegan or vegetarian. I find that pea protein powders work best for this recipe.

The only protein powder that really doesn’t work are collagen-based protein powders, since they don’t thicken up very well. 

How Do I Make This Keto Recipe?

All you need to do to make this a keto recipe is replace the maple syrup with a sugar-free sweetener like Stevia or monk fruit. Those two are the best tasting, in my opinion.

What Size Mug Should I Use?

I would use a mug that is at least a 12oz mug in size, that way there will be room for the cake to rise. 

Can I Use A Different Flavor?

The great part about this recipe is that you can really use any flavor you want! If you get sick of chocolate protein, you can use vanilla, caramel, pumpkin, birthday cake, etc. Feel free to get creative!

Toppings

I used chocolate chips in this recipe, but walnuts, chopped dates, or even sprinkles would be equally as fun and delicious. As I mentioned before in the protein section, getting creative is the fun part!

Protein Mug Cake

Yield: 1 serving

Prep Time: 2 minutes

Cook Time: 1 minute

Ingredients

  • 1 scoop chocolate protein powder
  • 1 tbsp almond flour
  • ½ tsp baking powder
  • 1 tsp cocoa powder
  • 1 egg
  • 1 tsp maple syrup
  • 2 tbsp milk of choice
  • Dash of vanilla extract
  • 1 tsp chocolate chips or nuts (optional)

Instructions

1. Grease your mug with some coconut oil or butter to keep the cake from sticking. 

2. Whisk the egg, maple syrup, vanilla extract, and milk together in a small bowl.

3. Add the dry ingredients to the bowl, and whisk until smooth. Try to get rid of most of the clumps in the batter. Stir in the chocolate chips.

4. Add the batter to your mug. Microwave for one minute on a normal setting. If you want more of a lava-style cake, microwave for 45 seconds instead of the full minute.

5. Grab a spoon and enjoy!
