Coffee Cake From Cake Mix Recipe

With only 10 minutes of preparation, this crowd favorite homemade coffee cake is a delicious go-to for any occasion!

Coffee cake is so simple and easy to make, and with a store-bought cake mix, it will be even easier to make than ever. 

This perfectly moist yet crispy cake is the absolute favorite cake in my household, and today I bring my easier-than-ever coffee cake recipe to yours!

What Is Coffee Cake?

This type of cake has been around for centuries with each country having its variation. The coffee cake is not a cake made with coffee but is usually served at coffee time and with warm coffee. 

The American version of this cake has a streusel topping and seems to have mainly originated from Germany. Thanks to the wide range of recipes available across the globe, now we can enjoy this super delicious coffee cake anywhere.

Is Coffee Cake The Same As Crumb Cake?

Although they look similar and the ingredients are similar, there is a difference between these two types of cakes.

Coffee cake has a cinnamon sugar center part and a thin layer of streusel, while crumb cake does not have a cinnamon center and it has a much thicker and chunkier crumb topping. 

My Tips For Coffee Cake

Coffee cake is easy to make, especially with a pre-made cake mix. There is no real way to make this cake bad, but here are some tips regarding preparation that may help you:

  • Dense batter – Do not be alarmed when your batter seems thicker than you were expecting. If you do feel like your cake batter is too thick, then you can crack an extra egg into it or simply add more milk. This will allow your batter to be a bit more pourable.
  • Muffin method – This cake utilizes the muffin method. This means the liquid ingredients are whisked together before you fold in the dry ingredients. The purpose of this is to evenly distribute the baking powder through the batter. This will ensure your coffee cake will rise nicely an evenly.
  • Do not over-mix – As with any recipe that includes batter, do not over-mix it. Stir until the ingredients are just combined. Over-mixing will develop more gluten and you will end up with way too firm cake.
  • Spreading cinnamon – To spread the cinnamon layer, you just have to sprinkle it. Be careful not to overdo it!

How To Store And Freeze Coffee Cake

Coffee cake is one of those cakes that just gets better after a day or two on the counter. The texture improves and moisture remains. It also freezes well. 

To freeze the cake, let it cool completely, then wrap it in plastic foil, followed by aluminum foil. This double wrap helps prevent it from drying out in the freezer. To defrost the cake, set it on the counter until it reaches room temperature. 

Recipe Add-Ons

This recipe is easily adaptable to include other spices. Cinnamon is great, but it can be paired with some others to create something unique.

You can add:

  • Some cardamom and a little orange zest for an interesting twist
  • Pumpkin spice
  • Chopped walnuts or pecans to the topping or batter

Ingredients

For the cinnamon filling:

  • ½ cup brown sugar
  • ¼ cup flour
  • 2 tsp cinnamon

For the streusel:

  • 2/3 cup brown sugar
  • 1 cup flour
  • 2 tsp cinnamon
  • ½ cup unsalted butter
  • 1 pinch salt

For the cake:

  • 1 box yellow cake mix
  • ¼ cup brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • ¾ cup milk

Instructions

Preheat oven to 350°F.

Make the cinnamon filling; combine the cinnamon filling ingredients into a bowl. Set aside.

Make the streusel; combine flour, cinnamon, and brown sugar in a bowl. Add butter and work it in with your fingers.

Stop kneading once crumbs form.

Make the cake; in a mixing bowl, beat eggs with sugar until fluffy.

Fold in milk and vanilla extract. 

Add cake mix and stir until just combined. 

Line a 9-inch baking pan with parchment paper. Pour in half the cake mixture. 

Top the cake mix with cinnamon sugar. Pour over the remaining mixture, reserving 3-4 tbsp of the cake mix.

Top the cake with the streusel and drizzle over the reserved cake batter.

Bake the cake for 45-50 minutes.

Cool the cake before slicing and serving.
