Egg Bites

Egg bites are my most favorite recipe. I love them because they are so versatile and can be made in so many ways.

Think ham, mushrooms, broccoli, spinach…the possibilities are endless. Egg bites really allow you to get creative, yet they are so simple and easy to make. 

For this recipe, I went with a classic combination of turkey, ham, and cheddar cheese. You can add in anything you like, and I am sure you won’t go wrong.

The delicious ham lies in a bed of melted cheese and creamy eggs…with this, you’ll have a delicious start to your day.

These egg bites kind of remind me of mini frittatas and if you love a good frittata, you will love these too. 

Choosing The Best Eggs

Have you ever thought about this? Are all eggs the same? White, brown, free-range, organic, pasteurized…my grocery has so many options.

This started me thinking about all these varieties and their differences. So, what are the best eggs? 

Since they are the key ingredient in this recipe (and many others) I invite you to read this text. Maybe you will be surprised with the new discoveries. 

  • Kosher eggs – As long as they are not cracked, almost all eggs are kosher. The eggs which are cracked or have blood spots are not considered kosher.
  • Free-range eggs – Eggs marked as free range means they are coming from the chickens that have outdoor access.  If the farm is following the rules properly, this means the chickens are running in the open, picking and eating all the things they usually do. These eggs will have a better flavor.
  • Pasture eggs – Pasture eggs are your safest bet. Pasture-raised hens actually live outdoors, and eat a diet of seeds and insects that could improve not only the taste, but also the nutritional value. 
  • Organic eggs – These eggs are usually labeled as antibiotic-free, and they also have no pesticides, GMOs, or added hormones. This means the hens were fed with organic food. Also, the organic eggs are both cage-free and free-range.
  • Omega-3 enriched eggs – This label does not mean the hens were stuffed with pills, but actually fed with plant sources of omega-3, such as flaxseed, flaxseed oil, linseed, and kelp.

Egg Grades:

  • Grade A: clean, smooth eggs with fairly thick egg whites
  • Grade AA: thick, clean shell, and firm egg whites
  • Grade B: may have bumpy shells and thin egg whites

The color of the shell does not have an important role. When you look at brown vs. white eggs, the brown eggs may look more natural, but they are the same. The only difference is the color of the shell.

Baking The Egg Bites

Your best friend when it comes to baking egg bites is a mini muffin tin. You can use classic ones, or choose silicone, but as long as it is a mini muffin tin, you will have the perfect egg bites.

Muffin tins are not just created for desserts. They are perfect for savory dishes too, as they divide it into perfect portions. 

Tips For Perfect Egg Bites

As with anything you are baking, you need to have something between your ingredients and the baking dish. I am talking about parchment paper, paper liners, or grease.

If you are using a silicone muffin tin, you can skip the greasing part, but I still grease my silicone tin a bit. It just eases the cleaning process.

If you are thinking about using paper liners, I must say I am against these. I’ve just had a few minor incidents of egg sticking to the paper liners and it affected the way they look. 

My go-to is to grease the muffin tin with cooking spray or melted butter. If you use melted butter, you may get extra flavor as well.

When your egg bites are baked, allow them to cool a bit before removing from the tin. As they cool down, they will become a bit firmer and will not break even if you are not totally gentle.

After removing egg bites from the muffin tin, place them on a paper towels so any extra oil can be removed.

Cooking time: 20 minutes

Ingredients

  • 6 eggs
  • ½ cup chopped turkey ham
  • ¼ cup shredded cheddar cheese
  • ¼ cup milk or heavy cream
  • 1 tsp red pepper flakes
  • Salt and pepper, to taste

Instructions

1. Preheat oven to 350°F.

2. In a bowl, beat eggs with salt, pepper, red pepper flakes, and heavy cream.

3. Divide the chopped ham and cheddar cheese between two 6-hole muffin tins or one 12-hole muffin tin, greased with cooking spray.

4. Pour the eggs over the ham and cheese.

5. Tap the muffin tin onto the kitchen counter and bake the egg bites for 20 minutes.

6. Cool the egg bites before removing from the tin.

7. Serve alone, with some sauce, or fresh salad.
