Mayonnaise Bread
Bread is the essential product on our table for thousands of years. Every civilization, every culture in history (we’re pretty sure) had some sort of bread which was the star of the table.
Some of them were made with whole wheat flour, some enriched with spices, while some civilizations made bread with the addition of dried fruits and honey.
Bread has changed over the time, and we’ve adopted new ways of making it. some of today’s most popular types of bread are plain white, and especially delicious sourdough bread.
Still, these types of bread require yeast as a leavening agent and this method of preparation requires some time.
But what would you say if I told you I have a delicious bread recipe, that is rich, soft, and with mayonnaise flavor? Would you try it?
Mayonnaise bread is made with bona fide mayo and baking powder as a rising agent. It is not time-consuming like classic breads that require yeast, and yet it has an incredible taste and texture to it.
Yep, it’s that simple! And don’t let the name fool you, it is a perfect, moist and yummy bread. So without further ado, let’s make this get cracking with this quick and easy mayonnaise bread recipe!
What is Mayonnaise Bread?
Mayonnaise bread is just bread made with mayo. It is soft and fluffy, and it has a mild mayonnaise taste. It may sound odd, but I promise you, it’s delicious!
Mayonnaise and baking powder act as the rising agent, so you don’t need to fuss with yeast! That means no hoping you thought to pick up the finicky ingredient at the store or desperately checking to see if it’s still good. Plus, you probably have all these ingredients at home already!
You can serve your mayonnaise bread in slices, use it for sandwiches, and most importantly, pair it with salads, soups, or a honey garlic chicken.
Why Add Mayonnaise in a Bread Recipe?
Mayonnaise is a surprising, yet not-so secret ingredient in baking.
Mayonnaise makes breads and even cakes moist and fluffy. It works in place of eggs in many baking recipes helping the finished product maintain texture, moisture and flavor.
Although mayo may seem like a strange ingredient to include in baked goods, it makes more sense when you think about its own ingredients: mayo is just a simple blend of egg yolks, oil, and vinegar.
The oil in mayonnaise makes your bread tender and moist, the egg yolks add richness, while the vinegar reacts with the baking powder added to make the bread extra fluffy. Plus, vinegar gives a unique flavor note to the bread.

Also, this mayonnaise bread is made with five basic ingredients that you almost certainly already have in your pantry. Once the bread is made in a bowl, you will just have to transfer it into the loaf in and bake for 25 minutes at 350F.
Yep, you don’t need to let it rise! It’s really that easy.
Why Make a Mayonnaise Bread?
This bread requires no yeast, so forget about kneading and rising time. Just mix all the ingredients, transfer into a loaf tin and bake.
Another benefit is that this is a budget-friendly bread. You can easily make one even after a busy day.
What I love most about this bread is its versatility – you can make it in any kind of pan, plain bread pan, mini loaf pan, or even in a muffin pan.
Speaking about different pans, keep in mind that the baking time will vary, as not all the pans hold the same capacity.
So here is a baking time chart you can use as a basic guide for adjusting the baking time by different pan types:
Regular loaf pan | Bake for 20-25 minutes |
Mini loaf pan | Bake for 15-20 minutes |
Muffin pan | Bake for 10-15 minutes |
Every pan can be unique, so you will want to check on your bread if using a different type of pan.
Recipe Variations
As this is a very simple and basic recipe, you can enrich the bread with different add-ins.
The choice of topping and filling you can use is absolutely endless. You can stir some grated cheese in your bread mix or even add cooked spinach. Also, you can add spices like chive, thyme or rosemary, or simply add sliced jalapeño peppers for a bit of spice.
Chopped olives, chopped asparagus, or bell peppers, will be a nice touch. You can also, sprinkle red pepper flakes, chia seeds, or sesame seeds on top of the bread…The possibilities are nearly endless!
Once the bread is baked, you can brush it with a mix of olive oil and garlic, or olive oil and herbs.
Special Tips When Making a Mayonnaise Bread
This bread is easy to make, but here are my special tips to help you bake the absolutely delicious and tender bread:
- Don’t over-mix. Mix the batter until the dough just comes together. Do not over-mix it as it may result in a heavy and dense bread texture.
- Double it for more deliciousness. As this recipe does not call for any special ingredients, you can easily double the recipe and make one big loaf or two regular ones. It is easy to scale the ingredients without any fear the baking will go wrong.
- Serve fresh. The bread should be left to cool completely in a loaf pan before slicing and serving. I like to serve the bread the same day as it is the best. If you have some leftovers the next day, they will be tender, but for the same feeling as it is just being baked, you can microwave the bread for 1 minute.
