Ice Cream Recipe Without Cream

Delicious vanilla ice cream without any ice cream machine or condensed milk.

The ice cream is a true indulgent summer treat. We love it because it is not just a cold treat that brings the heat down, but also because it is a perfect dessert. 

Everyone has their favorite ice cream flavor. Some like dark and bold chocolate, while others like sweet and playful strawberry, but let us be honest…nothing beats classic and delicate vanilla ice cream. 

I absolutely love vanilla in any kind of dessert and always have some vanilla extract or vanilla pods in my pantry.

Unlike some other recipes that use condensed milk, this one is made with full-fat milk. So no fancy ingredients for this recipe. I mean, condensed milk is not a fancy ingredient, but also not a thing you have always in your pantry.

If you are reading this from a smaller town then you may not be able to find condensed milk at your store. I’ve been there, and it is such a headache.

Still, do not despair. As mentioned, this recipe does not call for a condensed milk or ice cream machine and you will be able to make the most delicious ice cream ever in the comfort of your home.

Why Make Homemade Ice Cream?

There are several reasons to make ice cream by yourself. First, you can make loads of ice cream at a relatively small price. Homemade meals, desserts, or ice creams are always cheaper than their store-bought relatives.

Also, if you have any allergy, or you may have a gluten intolerance, then you know what cross-contamination is. Some companies (read the majority) produce many different products at their facilities.

Cross-contamination happens all the time and while it may be okay for some, the others may feel the side effects of one.

So, making ice cream at the comfort of your home is a completely secure way of avoiding any cross-contamination and giving yourself the best treat.

Should I Use Vanilla Extract for Ice Cream?

The ice cream made with vanilla pods will have a more intense flavor. Still, the vanilla pod is not something we have hanging around the kitchen, at least not all of us.

Although, you can get Grade A vanilla pods on Amazon for a really good price. So if you’re wanting to make incredible ice cream, I’d consider doing just that.

The use of vanilla pod is quite simple: you cut the pod in half and scrape out the seeds with a knife. Then, use the seeds as you want in custards or in vanilla ice cream.

Good to Know: You can use the leftover vanilla pods and make vanilla-scented sugar. Just place the vanilla pods in a jar and cover with sugar. The sugar can be used in various desserts. 

On the other hand, an ice cream with vanilla extract will not have that intensive flavor, but the extract has good sides. It is cheap, easy to find, and you do not have to follow a recipe we gave you. Add as much as vanilla as you like. Adjust according to your taste and do not worry. 

This vanilla extract is my absolute favorite, and what I use in recipes all the time.

How to Freeze Homemade Ice Cream

Well, we all know the freezer gets crazy from time to time. If you leave your just-made ice cream in the freezer to sit overnight, in the morning you will get a big frozen block of something that resembles ice cream.

The beauty of ice cream machine is that it freezes the ice cream to the perfect condition, but not everyone has an ice cream maker. So what to do?

If you’re curious, my absolute favorite ice cream maker is this one by Cuisinart.

Simply, pour the mixture into a loaf pan and freeze the ice cream, but…to prevent it from turning into the big block of ice or ice cream with ice crystals, make sure to stir the ice cream every hour. Yes, that is the trick that will save your ice cream and turn it into a creamy dessert. 

Another tip is to add vodka. If you are making ice cream just for the adults, add 1—2 tbsp of vodka into the ice cream mixture. It will not affect the flavor, but it will keep the ice cream on pint- soft and without ice crystals. 

Stirring = The Key to Creamy Ice Cream Without Eggs

No eggs are needed for this ice cream recipe, making it both egg-free and cream-free. People add eggs to get the right creaminess, but there is really no need for it.

Just stir your ice cream every hour and it will be creamy. You can always add eggs if you want, but why bother when this is a really great and tested recipe?

How to Make Vanilla Ice Cream Without Eggs or Cream

Step 1: Gather your ingredients.

Step 2: Whisk together full-fat milk and sugar in a saucepot. Simmer until the sugar is dissolved. If using vanilla seeds or pods, add them now. 

Remove the milk from the heat and allow it to cool down to room temperature.

Step 3: Pour the mixture into a loaf pan and pop in a freezer for 4 hours. Make sure you stir the mixture every hour.

Step 4: Remove the ice cream from the freezer 10 minutes before serving. Enjoy!

Ingredients

  • 2 cups full-fat milk
  • ½ cup granulated sugar
  • 1 tbsp vanilla extract or 1 vanilla bean, split and scraped
