Sometimes we put so much effort into the main meal, that we usually forget about the dessert. Speaking honestly, the desserts, at least some, require a bit more culinary skills.

What would you say if someone offers you the easiest yet the most indulging recipe that you can make with simple ingredients and without any fancy equipment?

This is that recipe!

Mud pie ice cream cake is a delicious dessert that is ready in no time. It is such a basic and simple recipe and can be even made ahead, a day or two.

Mud pie ice cream really combines the best classics: Oreo cookies, coffee ice cream, and chocolate. A dessert to remember and even non-dessert lovers will appreciate this one.

Ice cream is not something reserved just for the summer or to enjoy just alone. Coffee ice cream can be used in many desserts, and the best dessert is mud pie.

Tips For Making Mud Pie Ice Cream Cake

The first thing you need to choose is a pie plate or springform. If you do not have a pie plate with a detachable bottom. The worst thing that can happen with the dessert is that you cannot remove it.

If you use a pie plate with a detachable bottom or springform the removal will be easier. Keep that in mind.

Once you have an adequate pie plate, it is time to make your crust. Combine the crust ingredients until you have a wet sand-like texture.

When you start pressing the crust into the pie plate you will want to push the crust upwards to create high sides. At one point it will look like too much, but you have to trust me: this is what you want.

The bigger the sides, the more ice cream will fit into the pie shell.

Once you have formed the shell it is baking time. A good 10 minutes at 350F will give a nice and firm crust. 

Once the crust is baked leave it to cool completely. If it is hot just a little bit, it will start to melt the ice cream and you will end up with a soggy crust. 

Once the crust is cooled, fill it with soft ice cream. Just leave the ice cream on the counter for 10 minutes and give it a gentle stir. 

The rest is easy and the freezer will do its magic. You can garnish the cake just with melted chocolate or go a step further and enrich with coffee beans coated with chocolate. 

You can drizzle the pie before freezing or just before serving…it really does not matter. 

Ingredients For Ice Cream Mud Pie

Speaking about the crust, you can use Oreo cookies or any kind of chocolate wafers. You can buy ground or grind them yourself in a food processor or by rolling with a rolling pin in a plastic bag. 

The ice cream is not negotiable! The best option regarding flavor is coffee ice cream. Of course, you can use vanilla or chocolate, or even a walnut ice cream, but it will not be the same experience. 

The chocolate-covered coffee beans are an optional step. If you find these, feel free to use…or just crush some plain roasted coffee beans and sprinkle over the mud pie. It will give a nice crispy finish. 

Another good option is to add some crushed cookies or some chopped peanut butter cups. 

How To Serve Mud Pie Ice Cream Cake

Although some frozen desserts are hard to cut through, this one is easy if you allow it to thaw just enough.

Just leave it on a counter for 10 minutes and you will cut it through easily.

Make sure you share everything otherwise you will find yourself with a fork at the freezer door in the middle of the night. 

How To Make Ice Cream Mud Pie

Preheat oven to 350F.

Step 1: Gather your ingredients.

Step 2: Make the crust. Combine the cookies and butter in a bowl. 

Step 3: Press the mixture into a 9-inch springform or a pie plate. 

Bake the crust for 10 minutes. Cool the crust completely.

Step 4: To make the filling, leave the coffee ice cream on the kitchen counter for 10 minutes.

Fill the pie crust with the ice cream, distributing it all evenly. 

Freeze for one hour. 

Step 5: Make the topping. Melt 1.5oz chocolate in a microwave. Stir in the heavy cream until smooth. Drizzle the chocolate over the ice cream.

Top with remaining chopped chocolate and coffee beans if using.

Step 6: Freeze the cake for 6 hours. When you’re ready to serve, leave the cake on the counter for 10 minutes. Slice and serve.

Ingredients

  • 8 oz ground Oreo cookies or chocolate wafers
  • 4 tbsp melted butter
  • 2 pints coffee ice cream
  • 3oz. chopped chocolate
  • 2 tbsp heavy cream
  • 2 tbsp chocolate-covered coffee beans, optional

Instructions

Preheat oven to 350F.

Make the crust; Combine the cookies and butter in a bowl. 

Press the mixture into a 9-inch springform or a pie plate. 

Bake the crust for 10 minutes. Cool the crust completely.

The filling; leave the ice cream on the kitchen counter for 10 minutes.

Fill the pie crust with the ice cream, distributing it all evenly. 

Freeze for one hour. 

Make the topping; melt 1.5oz chocolate in a microwave. Stir in the heavy cream until smooth.

Drizzle the chocolate over the ice cream. Top with remaining chopped chocolate and coffee beans if using.

Freeze the cake for 6 hours. 

Serving; leave the cake on the counter for 10 minutes. Slice and serve.
