They are easy to make and will make a great addition to your breakfast sandwiches. You can season them as you like or leave them plain with just salt and pepper.

How To Make The Egg Patties?
In terms of ingredients, these egg patties are not demanding at all. Eggs, some heavy cream, and your favorite seasonings are all you need.
To shape these, there are different ways, and I have tested them all, including some tips from the TikTok.
Yes, I do follow some of the TikTok tips and tricks just to check them out and see what may come in handy. Here are the best ways to make egg patties, and some are not so good.
- Use silicone molds; Silicone molds are the easiest ones you can use. They are shaped into circles and have small handles that allow you to lift your patties. They also fit nicely on every skillet without eggs leaking out.
- Use a mason jar lid; Mason jar lids have a detachable part and this comes very handy for making patties. Before you use the lid, make sure to grease it so the eggs do not stick to it.
- Use mini spring forms; Mini spring forms will work just as well as mason jar lids. They will fit nicely on the skillet without any leaks.
- When using these, make sure you grease them too. The spring forms have a non-stick coating, but because of all the mechanisms on them and the lock system, the eggs may stick.
- The TikTok hack; I recently watched a viral hack on preparing perfectly shaped eggs. The hack includes rubbing garlic over a skillet.
- This is meant to create a barrier that will prevent the egg from spilling over and giving it a perfect shape. This trick will not work for patties at all, because the barrier only works on a very thin layer of eggs.
How To Cook Patties Perfectly
The ideal way to cook eggs is not just by using a skillet. I tried to cook the eggs just with the skillet, but by the time the top was cooked, the bottom part was a bit too brown.
To avoid this, cook the patties covered with the lid. Cover the skillet, entirely, and this will create some extra heat that will cook the eggs from the top and you will have a perfectly cooked patty all the way through.
The other thing to do is to flip the patty, but I find that flipping will deflate the patties.
Besides a skillet, you can cook patties in your oven. For this, do not use a muffin tin, because the patties will be small. If you want larger patties, use ramekins.

Milk Or Water?
When preparing eggs, people tend to whisk them with milk or heavy cream. I do too, as a matter of fact.
The milk brings some creaminess to the eggs, but that’s not actually what we need for this recipe. Milk will make your patties a bit fragile and they will not keep their shape perfectly.
Also, milk will make the patties dense. To make the patties light and airy, add water instead of milk. If you want them to be extra fluffy, add some baking powder too, just from the tip of your knife.
Or, just use sparkling water instead of plain water, though you don’t want to overdo it. I recommend adding ½ tsp sparkling water per 1 large egg.
How To Season The Patties?
Salt and pepper are my go-to. This basic combo is all that you need. If you want to add some fresh herbs, I suggest parsley, or if you want a spicy version, go with chili powder. The possibilities are endless!
How To Serve Egg Patties
For a full breakfast, I serve these with sandwich buns, sausage patties, cheese, and some arugula. This provides a full breakfast experience.
To make the sausage patties, you will need raw sausages. Squeeze out the meat from the casing and shape it into the patties. Afterward, cook the patties as usual.
Once all the key steps are made, you can assemble your party as you wish. I like to place the cheese on top of the sandwich buns and pop it all into the oven for 5-6 minutes until the cheese is melted.
Place the sausage patty on top of the cheese, followed by the egg patty, and finish off with some arugula. You can also add condiments, and for this, I adore garlic aioli. Give it a try!

- 4 large eggs, room temperature
- 4 tsp sparkling water
- 4 cheese slices
- Salt and pepper, to taste
- 4 breakfast sausages, casing removed
- 4 sandwich buns
- Arugula or desired greens
- 4 bacon slices, cooked, optional
Instructions
1. Beat eggs with sparkling water and salt and pepper, until fluffy.
2. Heat skillet or griddle over medium-high heat. Use your desired tool to make patties; a springform, Mason jar lid, or silicone mold. If you are using anything else besides the silicone mold, make sure to brush these with some oil.
3. Pour ¼ of the mixture into the mold. Cover the skillet with the lid and cook the egg patty until the top is set.
4. Unmold the patties and place them on a platter.
5. To cook the sausage patties, shape the sausage meat into a patty and cook in the skillet over medium-high heat until cooked through.
6. To assemble, cut the sandwich buns in half.
7. Place cheese on top. Place the sandwich buns under the oven broiler until the cheese is melted.
8. Toast the tops in a toaster or under a broiler.
9. Place sausage patty over cheese. Add egg patty and finish off with arugula.
Close the sandwich with the remaining sandwich half and serve!
