Churro Cake

Churros are a popular dessert in Spain. The stick-shaped doughnuts are often sold by street vendors and served with hot chocolate or chocolate dipping sauce.

Churros are an addicting combination of cinnamon, sugary sweetness, and a splash of chocolate. These doughnuts are a perfect treat, but can they be upgraded?

They can, not only in terms of flavor but also in appearance! Churros are easy to make and look gorgeous, but turning these into a cake will look and taste even better!

Churro Dough Or Cake Batter?

By turning churros into a cake, I do not mean literally shape churro dough into a cake, but make a cake that has the same flavors as classic churros.

I tried to make the cake base with churro dough, but I was not completely happy with the results.

When comparing baked and fried churro dough, fried dough has more crispiness and a soft center, while the baked churro dough is not that crispy. Also, when baked, it was a bit too eggy and dense.

So, instead of choosing churro dough, I made a soft cake with churro flavoring.

Chocolate Or Dulce De Leche?

There are two types of churros; Spanish and Brazilian. The Spanish churros are served with chocolate while the Brazilian churros are served with dulce de leche.

Honestly, I was torn on which to choose, so naturally, I went with both!

If you are wondering if you can choose and stick with just one, yes you can. Just make sure to double the filling!

How To Make Dulce De Leche

In the majority of the stores, you can find already prepared dulce de leche, but in case you could not or just forgot to pick it up, you can make your own. You just need a can of condensed milk.

Method 1:

  1. Place the unopened can of sweetened condensed milk in a sauce pot and cover it with two inches of water. Bring the water to a boil, and once it boils, reduce the heat.
  2. Simmer dulce de leche for 2 hours for light dulce de leche or 3 hours for darker dulce de leche. 
  3. Once it is cooked and cooled through, whisk the dulce de Leche to remove any lumps.

Method 2:

  1. Instead of cooking it in a sauce pot, you can also bake it. Pour the condensed milk into a pie dish, cover it with aluminum foil, and transfer to a larger roasting dish filled with about an inch of water. Bake dulce de leche for 1 hour and 45 minutes. 
  2. Once it is cooked and cooled through, whisk the dulce de Leche to remove any lumps.

What Does This Cake Taste Like?

This cake is my new obsession. First of all, it is delicious. It is moist, sweet, has a dense cinnamon buttery crumb, and yes, a mixture of dulce de leche and chocolate ganache. 

This cake is very easy to make, although it may not look so.

If you are not a savvy or patient baker, then this easy cake is perfect for you! It is a perfect cake for a centerpiece and when you just want to brag about your culinary skills. 

Can I Use Something Else For The Filling?

I saw many recipes that have different fillings for the churro cakes, and they are all pretty easy, from ganache cream, to dulce de leche, and just whipped heavy cream.

I tried the version with whipped cream too, and it was surprisingly light. So, if you want something lighter, then you can try this filling with the ganache on top. 

Churro Cake Recipe

Preparation time: 30 minutes

Cooking time: 30 minutes

Servings: 9 slices

Ingredients:

For the cake:

  • 6 oz butter
  • 1 ½ cup sugar
  • 3 eggs
  • ¾ cup milk
  • 1 tsp vanilla extract
  • 1 ½ tsp cinnamon
  • 2 cups flour
  • 2 tsp baking powder

For the filling:

  • 14 oz dulce de leche

For the coating:

  • 1 ½ tbsp sugar
  • 2 tsp cinnamon

For the ganache: 

  • 4 oz chocolate, quality dark
  • 4 oz heavy cream

Instructions:

1. Make the sponge cake; preheat the oven to 350°F.

2. Grease two spring forms with butter and line the bottom of each with parchment paper.

3. In a mixing bowl, beat eggs, sugar, and vanilla.

4. Add milk and fold in flour, cinnamon, and baking powder.

5. Mix well until you have a smooth batter.

6. Divide the batter between the spring forms. Bake the sponge cake for 30-35 minutes.

7. Move the cake pan to a cooling rack and let it cool for 10 minutes, then remove the cake from the pan and let it cool on the rack.

8. Coat the cake; in a shallow dish, combine cinnamon and sugar. Brush the edges of the cake with some melted butter and roll it through the cinnamon mixture. 

9. Place the cake on a cake stand. Spread half dulce de leche over the first layer of the sponge cake.

10. Spread the remaining dulce de leche over the sponge cake. 

11. Make the ganache; chop the chocolate and place it in a bowl. Heat heavy cream in a sauce pot over medium heat.

12. Once the cream starts to develop bubbles around the edges, remove it from the heat and pour it over the chocolate. Let the chocolate stand for 2 minutes, then stir it until you have a smooth mixture.

13. Spread the ganache over the dulce de leche.

14. Chill the cake for 30 minutes before serving and slicing. Enjoy!
