Can You Freeze Deviled Eggs?

Deviled eggs are a great appetizer that can be served with several types of flavored fillings. But how well do these gourmet eggs store?

Can you freeze deviled eggs? Yes and no! While the deviled egg mixture can be stored in the freezer for up to 3 weeks at 0°F, the egg whites will not freeze well. Freezing the egg whites will cause them to lose their texture and flavor, so it is better if you just freeze the filling.

What Are Deviled Eggs?

Deviled eggs are a fun take on a regular boiled egg.

This preparation method has been around since the Roman era when center-filled eggs were served to the elite just before a grand meal.

Today, deviled eggs are known to be one of the best finger foods in the world!

They are extremely easy to make and are an inexpensive way to wow your guests since most of this recipe revolves around the flavor of the filling and its general presentation.

Before we get into the storage practices, let’s first discuss how deviled eggs are made. This will make it easier to understand the dos and don’ts of storing fully prepared deviled eggs!

How To Make Perfect Deviled Eggs

Here’s how to make a perfect batch of deviled eggs!

Ingredients

  • 6 eggs
  • Ice cubes and water
  • 4 tbsp mayonnaise
  • 1–2 tsp yellow mustard
  • Salt
  • Pepper
  • Paprika

Instructions

  1. The recipe starts with perfectly hard-boiled eggs. Deviled eggs require a yolk that is not runny or too dry — this “just right” condition can be achieved by boiling the eggs for no more than 11–12 minutes
    • If the yolk is too runny, it will affect the texture of the filling; if it’s too dry, then you won’t be able to pipe the filling or get that smooth, creamy texture.
  2. Once the eggs are cooked, shift them into an ice-water bath to immediately halt the residual cooking process. When the eggs are cool, peel and cut them in half.
  3. Carefully remove the yolk from the center of each egg half and place it in a mixing bowl. Rinse off each egg white to clear any leftover yolk debris, then set aside. 
  4. In a bowl, add all the yolk, and the required amount of mayo, mustard, and desired seasonings. Whisk well until everything is combined. 
  5. This is usually when people make the first mistake when making deviled eggs — if you don’t combine all the ingredients to a smooth paste, then you won’t get the right consistency when piping the egg yolk mixture!
  6. Fill up the whisked filling in a piping bag and attach a nozzle of your choice. Then simply fill the center “well” of the egg white with the filling and top with herbs or a simple seasoning of paprika and pepper!

Storing Deviled Eggs

If you notice in the preparation method above, there are two main components of a deviled egg:

  1. An already hardboiled egg white
  2. Yolk-based filling

The problem with storing deviled eggs is that only one of the two components can be stored.

Egg whites do not store well, especially when they are already cooked. Even if you do freeze them, they will take on a gel-like texture that is rubbery, loose, and maybe even gooey. 

Apart from its odd texture, the egg whites will also lose most of their flavor. This happens because of the formation of ice crystals in the egg that destabilizes its structure, specifically when they are thawed. 

But as far as the filling goes, you can store it just like any other food item!

How To Freeze Deviled Eggs Filling

There are several ways to store the filling for deviled eggs that are equally versatile for storing in the fridge or freezer. Let’s get into it!

The Piping Method

The first method involves loading the filling in a piping bag and then storing that, ready to go for future use. 

To do this, you will need to tightly fill the piping bag in a way that gently compresses the filling — this will ensure that there are no air bubbles or gaps in the mixture, which will help keep air and moisture out. 

We recommend you fold the back of the piping bag and squeeze the filling to push it down, like how you would roll a tube of toothpaste — just make sure that you don’t build too much pressure or the filling might escape through the nozzle!

Once the piping bag is tightly filled, add a plastic clamp on top to keep the bag shut. You can now store the bag in a freezer-safe plastic bag or inside an airtight container

The Direct Method

The second method is an even easier and more convenient way to store the filling! For this method, you will be preparing the yolk filling directly in a storage container.

Once you have mixed all the ingredients and prepared the creamy filling, put the lid on the airtight container and store it at the back of the freezer.

Store the filling at 0°F for up to 3 weeks. You can try storing it for longer, but the egg mixture will start to lose its texture and flavor around the 3-week mark.

Thawing Deviled Eggs

Thawing frozen deviled egg filling is super easy — all you need to do is to shift the container from the freezer to the fridge and let the mixture naturally defrost overnight!

Do not store the frozen mixture at room temperature — eggs can easily spoil and can become hazardous. Never keep frozen items outside the fridge or freezer for more than 2 hours!

You can try defrosting the egg mixture in the microwave using the defrost setting, but there is a chance that the texture of the eggs might change with the added heat.

This is why we highly recommend that you only thaw the filling mixture overnight in the fridge at 40°F.

Once thawed, use the egg mixture as you normally would, just with fresh egg whites instead of frozen ones. 

Do not attempt to refreeze the leftover filling as it will not freeze well a second time. When you’re done using the filling, just discard the excess. 

Signs Of Spoilage

Deviled eggs are one of the quickest foods to go bad. Please discard the batch if you see any of the following changes.

Change In Smell

This is one of the best ways to detect spoilage — if the egg filling has an acidic or off-putting scent, then you should consider it spoiled.

A fresh filling will smell like nothing, or will only have a subtle savory aroma, depending on the types of ingredients added to it.

Change In Color

Notice any color changes in the filling? Then this may indicate spoilage!

If you haven’t used any colorful ingredients like chili flakes, chopped mushrooms, dill, or any other noticeable ingredient that may otherwise confuse you, then you can safely assume that the egg mixture has gone bad. 

When using multiple colorful ingredients, it is best to close inspect the affected area and look for fuzzy growths or discoloration with a hazy outline.

Generally, any texture or color change on the surface must be considered harmful and the eggs should be discarded.

Change In Flavor

Deviled eggs should taste great and deliver the flavor notes added to them through the ingredients. If you notice any foul flavor or a subtle bitterness then we recommend spitting out the egg and rinsing your mouth. 

Always remember to discard the entire batch of eggs rather than singling out just the affected ones. If all the eggs were prepared at the same time, and if only one went bad, then it’s safe to assume that all of them have spoiled!

How long do refrigerated deviled eggs last?

Whole deviled eggs may not be able to freeze well, but they can be refrigerated for about 3–4 days.

Once prepared, store the filled egg whites in a dry airtight container. Make sure that you space each egg apart to prevent them from bumping into each other, or invest in a container specifically designed for eggs.

Store the container at 40°F at the back of the fridge and try to consume them within 2 days for maximum flavor.

Always check for signs of spoilage before consuming deviled eggs that are 4–5 days old.
