Sweet And Spicy Brown Rice Noodle Recipe

Quick, easy, and healthy is the quintessential weeknight dinner that we all strive for, right? Well, look no further than this recipe right here!

In 20 minutes, you can have a meal that’s packed with tons of veggies and greens, flavors that are low in sugar and salt, and it’s gluten and dairy-free!

This noodle dish is what all take-out dreams are made of, but made right in the comfort of your own kitchen. It’s sweet but savory and a little spicy too.

This is a great meal to have as a base, but you can switch up the vegetables and add some protein like chicken (like I did) or shrimp if you want to make this recipe again.

You’ll notice in the instructions we don’t start with cooking the pasta, and that’s because rice noodles cook half as fast as regular pasta and I find it gets too sticky to work with if it sits too long.

We boil the pasta as we are cooking the veggies, so when they are done boiling, we can add them straight into the sauce. 

What Are Brown Rice Noodles Like Compared To Regular Pasta?

Brown rice noodles definitely have a chewier texture than regular pasta. They also cook in about half the time (around 5 minutes), so that’s also nice if you’re in a pinch for time. 

Is This Recipe Gluten-Free?

Yes, this recipe is gluten-free! Brown rice noodles are naturally gluten-free, and I chose tamari instead of soy sauce since it’s gluten-free as well. 

Can I Add Different Vegetables Or Protein To This Recipe?

You can add any additions you would like! I chose a lot of green veggies to make it extra healthy, and I also added chicken for some easy added protein, but I bet anything from cabbage to shrimp would taste amazing too.

What Is Tamari And Where Can I Find It?

Tamari is essentially like soy sauce due to the fact that it is made from Japanese fermented soybeans.

It is gluten-free and has a thicker consistency, a more balanced flavor, and lacks the sharpness associated with traditional soy sauce, which I appreciate. 

What If I Don’t Like Too Much Spice?

If you don’t like your food too spicy, you can omit the red chili flakes!

How To Make Sweet And Spicy Brown Rice Noodles

Step 1

Assemble your ingredients.

Heat a skillet over medium heat and add some olive oil. Chop your veggies while the skillet heats up. Start boiling your pasta water. 

Add the veggies to the skillet and cook for 5 minutes. 

Step 2

Grate the ginger and garlic and add them to the skillet after the 5-minute mark. Cook for another 1-2 minutes or until it starts to smell fragrant. 

Once the water is boiling, add your brown rice noodles and cook for 5 minutes. 

While the pasta is cooking, add the tamari, lime juice, rice vinegar, honey, and chili flakes to the skillet. Turn the heat down to low. 

Step 3

Drain the pasta, and transfer the noodles immediately to the skillet. Toss everything around gently with tongs. Serve in a bowl and garnish with green onion, more chili flakes, and a wedge of lime.

Ingredients

  • 1 package brown rice noodles
  • 1 bunch of broccolini
  • 1 head of bok choy
  • 1 inch knob of ginger
  • 1 garlic cloves
  • 1 tbsp honey
  • Juice of 1 lime
  • ¼ cup tamari 
  • 1 tbsp rice vinegar
  • Red pepper flakes to taste
  • Green onion for garnish

Instructions
