Oat Milk Pancakes

Homemade oat milk pancakes are delicious dairy-free pancakes ideal for the breakfast. They are completely dairy-free, and instead of the butter usually used, I went with vegetable oil.

These pancakes come together very quickly, in one bowl, and are a perfect and healthy alternative to the store-bought mix. 

You can serve the pancakes with fresh fruit, drizzled with honey or maple syrup. 

What Are Oat Milk Pancakes?

As the name states, these are pancakes made with oat milk and are completely dairy-free. With this recipe, you will enjoy perfect fluffy and light pancakes in no time, and spend the rest of the time with your family on a lazy afternoon.

These pancakes are ideal for those who are lactose intolerant. To make them, you do not have to fit inside that category, because they are suitable for everyone with plain oat milk or extra cream oat milk.

I have tested and tried both, and they come out perfectly either way. The pancakes with extra cream oat milk are a bit denser, but that does not compromise their amazing flavor. 

Substitutes For Butter

As mentioned earlier, I used vegetable oil. Instead of this, you can use olive oil or coconut oil. Of course, pancakes with coconut oil will have that well-known coconut taste.

Can I Turn These Pancakes Into Vegan Recipes?

These pancakes can be easily transformed into a vegan delicacy. To make these pancakes vegan, you can swap the sugar and eggs.

For the sugar, you can use unrefined or organic white sugar that is not made with bone char. Sugar that is made with beets is also a vegan option.

The easiest way to substitute eggs is to use one mashed banana. The second option is to use flax eggs. 

Why Make Oat Milk Pancakes?

It all comes down to one ingredient, the oat milk. So, why choose oat milk over regular milk? Besides being dairy-free, oat milk is a creamy and sweeter alternative than regular milk.

The oat milk also gives the pancakes an extra fluffy and super moist texture.

Oat milk can be used instead of plain milk in any recipe, in a 1:1 ratio. You can use classic, vanilla-flavored, or creamy oat milk. 

Are Pancakes Better With Milk Or Water?

When you are lactose intolerant, the natural thing that comes to your mind is just to omit milk in every recipe. Still, will the pancakes taste the same without the milk?

Oat milk is not just a substitute for milk, it is a flavor enhancer. In addition, the milk will improve the texture of pancakes and make them fluffier than the pancakes made with water.

Do I Need To Rest My Pancake Batter?

This step is not required, but if you let the batter rest for at least 10 minutes, the batter will become better.

After 30 minutes of resting, the pancake batter will become fluffier and lighter. So, although it is not mandatory, it is highly recommended.

Can I Use Almond Milk?

Almond milk is often used in dairy-free cooking because it has a mild flavor. Unlike coconut milk, almond milk is very mild, just like oat milk.

Although almond milk is naturally dairy-free and peanut-free, this is not the safest choice over all. Coming from tree nuts, almond milk is not a good choice for those with nut allergies.

Oat milk is completely nut-free and therefore is a better option. 

How To Serve Pancakes

These pancakes are incredibly delicious even if served alone. But if you want to give them extra flavor, you can serve these with:

  • Fruits
  • Maple syrup or honey
  • Lactose-free yogurt
  • Chocolate spread with bananas or berries

When it comes to shelf life, these pancakes will hold great for 48 hours, but afterward, they will begin to lose moisture and become dry.

If you want to freeze these, make sure you stack them, placing a piece of parchment paper between every pancake. 

Place the pancakes in a zip-up bag and freeze them for up to 3 months. To serve, defrost the pancakes overnight and heat them in a microwave.

Preparation time: 10 minutes

Cooking time: 10 minutes

Servings: 8 pancakes

Ingredients

  • 1 cup flour
  • 2 tsp baking powder
  • 1 ½ tbsp caster sugar
  • 1 pinch of salt
  • 1 cup oat milk, vanilla, classic, or creamy
  • 1 egg
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract

Instructions

1. In a large mixing bowl, whisk flour, baking powder, sugar, and salt.

2. Add in milk, egg, vegetable oil, and vanilla extract. Stir until you have a smooth mixture.

3. Let the batter rest from 10-30 minutes.

4. Set a skillet over medium-high heat. Spray it with a bit of cooking spray. 

4. Drop 3 tbsp of the batter into the skillet. Cook the pancakes until the bubbles appear on the surface. Carefully lift and flip the pancakes and cook them for another minute.

5. Serve pancakes warm, topped with fruits, honey, or maple syrup.
