In this recipe, I will show you how to make the perfect pancakes that are just perfect for breakfast, brunch, or when you need a delicious pick-me-up.

What Equipment Do I Need?

As the title says, you’ll need an air fryer!

Any working air fryer is good, but if you want to use most of your air fryer, then choose air fryers with an XL basket. This type of basket comes in very handy — I wish I’d known this earlier, but at least you can learn from my mistakes!

The second piece of equipment you need for this is disposable aluminum 5- or 6-inch pie tins or mini springform pans.

This size is perfect for the pancakes and since the disposable tin is very thin, your pancakes will be perfectly cooked on the bottom. The same is with mini springform pans, as their bottom is thin.

I do not recommend using ceramic or glass oven-proof containers as the pancakes will be undercooked. 

Can I Cook Pancakes On Parchment Paper?

You may have seen a TikTok video where some person cooks pancakes just by using parchment paper, and not just cooking but stacking pancake batter on pieces of the parchment paper. The result: perfect pancakes.

I will tell you one thing — that is completely fake, and you will not get the same results as with the method I am using.

I made those pancakes once out of curiosity and I ended up with undercooked, super-flat, and unappealing pancakes. Never again. So, my point here is, do not believe everything you see on the internet. 

How Do I Make Multiple Pancakes In The Air Fryer?

The best way to make multiple pancakes in the air fryer is to make them small and cook them in disposable baking tins or mini springform pans.

The size of your air fryer basket will determine how many can you make at once, so getting back to my previous note — buy an XL air fryer

Pancakes made inside a disposable tin or mini springform pan will cook evenly, as they will inflate and keep their perfect shape during the whole cooking process. 

Any other method besides this one is a failure — I know because I have tried them!

Can I Reuse Disposable Tins?

Although these tins are marked as disposable, you can rinse them out and use them again next time. There is no issue here, as the pancakes will not stick to your disposable pan and easy removal is guaranteed.  

Recipe Tips And Tricks

These pancakes are easier to make than stovetop pancakes — there is no flipping or watching anything burn!

Still, here are a few tips that may come in handy:

  • Evenly spread your pancake batter in a disposable pan. This will ensure you have even pancakes! Use ¼ cup of batter per pancake so that all the pancakes will be the same size. 
  • For thicker pancakes, increase the batter and use up to ½ cup of the batter per pancake, but in that case increase cooking time by a few minutes.
  • I always like to make buttermilk pancakes as I think they taste the best. If you have not tried these yet, now is the time!
  • Cook the pancakes at 400°F. I find this to be absolutely the best temperature as a lower temperature will not give a nice golden color to your pancakes. 
  • Make sure you do not overmix the pancake batter. Overmixed pancakes will be heavy and dense. 

Can I Freeze Cooked Pancakes?

Another beauty of these pancakes, besides having a perfect flavor, is that they are freezable goods! After thawing they will still stay the same and just as freshly cooked.

To freeze the pancakes, simply stack them between pieces of parchment paper and store them in an airtight container before stashing them in your freezer.

When you’re ready to eat them, defrost the pancakes in a microwave for 30-45 minutes.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ tbsp sugar
  • ¾ tsp baking powder
  • ½ tsp baking soda
  • 1 ¼ cups buttermilk
  • 1 egg
  • 2 tbsp oil or melted butter
  • ½ tsp vanilla extract
  • Fresh fruits and whipped cream, to serve with
  • Honey or maple syrup, to serve with

Instructions

1. In a bowl, beat egg with sugar, oil, vanilla, and buttermilk.

2. Add flour, baking powder, and soda. 

3. Stir until smooth. Let the batter rest for 15 minutes so the buttermilk can do its magic!

4. Preheat your air fryer to 400°F.

5. Coat disposable tins or mini springform pans with cooking oil.

6. Drop ¼ of the pancake batter into each prepared tin. Fit as many tins into your air fryer as you can.

7. Air-fry the pancakes for 7-8 minutes or until they are nicely golden on the top.

8. Serve warm with optional toppings such as fresh fruits, whipped cream, and honey or maple syrup.
