Baked Brownie Oatmeal Recipe

Is it a brownie? Oatmeal? Breakfast? Dessert? Baked brownie oatmeal is all in one!

It is suitable to be served for a breakfast, but also a great option for a healthier dessert. Brownie oatmeal is a perfect treat for vegans too, as it contains no eggs or dairy products. 

If you are looking for a plant-based breakfast and need an excuse to eat something chocolatey and sweet for breakfast, then this is the right recipe for you.

This brownie oatmeal combines two of my favorite ingredients and creates a healthy breakfast that is full of nutrients. 

Why Is Oatmeal A Perfect Breakfast Option?

When it comes to breakfast, there are many healthy options, but this one is the tastiest for me. The oats are heart-healthy, full of vitamins and minerals, and rich in fiber that will keep you satiated until lunch. 

Another benefit is that this one is very easy to make. You can use a blender or a food processor to combine all ingredients before transferring them into ramekins and baking. 

Is This Better Than Regular Oatmeal?

Baked oatmeal has become very popular lately, thanks to social networks. Baked oatmeal is among the most popular viral recipes.

I know some recipes will not meet our expectations – cauliflower pizza will never taste like a real one and zoodles are not that close to real pasta, but baked oatmeal that tastes like cake, well I must admit there’s some truth in the comparison. 

This baked oatmeal is a perfect breakfast treat and for me a better and more luxurious meal than regular oatmeal. It has more flavor, a better texture, and a more pleasant overall appearance.

Sometimes when I bake my oatmeal, I let it sit overnight in the fridge, and in the morning just pop it out of the ramekin. The result is an oatmeal brownie that looks like a piece of cake. 

Which Ingredients To Choose

For brownie oatmeal, you need a few simple ingredients.

Oats, banana, cacao flour, almond milk, and some chocolate chips are all ingredients you probably have in your kitchen, so you can mix this delicious breakfast straight away or first thing in the morning. 

There is no need to smarten up as these ingredients are very simple, but here are some of the most important parts.

  • Oats – Choose old-fashioned organic oats. These oats are pesticide-free and are abundant in vitamins, minerals, and macronutrients. Just a perfect ingredient to start your day.
  • Bananas – The spottier banana the better. They do not always look appealing, but they are softer and much sweeter than those perfectly yellow bananas. 
  • Cocoa powder – I always use unsweetened cocoa powder. It has a better flavor than sweetened versions and a richer color. 
  • Milk of choice – I use homemade almond milk, but feel free to swap in your preferred kind of milk. Oat, cashew, coconut, or regular milk will work great. 

Can I Add Something Extra?

Baked oatmeal is perfect as it is, but you can add some extra ingredients. The most popular ingredient to add is nut butter.

You can use peanut or almond butter, or even cashew butter. If you are looking for some crunchy texture, this oatmeal will be so good with some chopped peanuts or almonds inside. 

Baked Brownie Oatmeal

Preparation time: 5 minutes

Cooking time: 15 minutes

Serve: 2

Ingredients

  • 2/3 cup oats
  • 1 ½ banana
  • ½ cup almond milk
  • 2 tbsp cocoa powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • 2 tsp desired sweetener

Instructions

Preheat oven to 350°F. 

In a food blender, blend the oats, cocoa, and baking soda. Do not turn the oats into a fine powder. 

Add in milk, vanilla, and bananas.

Blend until smooth.  

Divide the mixture between two ramekins. Top with chocolate chips.

Bake the oatmeal for 15 minutes. Remove the oatmeal from the oven and serve as desired.
