- The oat flour is made from gluten-free oats. Gluten is normally the binder in cookies and gives them elasticity. So, when baking with oat flour, make sure you have some kind of a binder – it can be egg, flax, psyllium husk, or even xanthan gum. These will prevent the cookies from falling apart.
- Oat flour is the type of flour that lightens any baked good. So, when making oat flour cookies, they will be super light in terms of texture. So, it is advisable to pack the cookies with some type of fat, and it this case we used butter.
- Oat flour combined with water gives a sticky dough. To prevent any dough from sticking to your fingers, you can either grease your hands with butter or oil or just wet your palms with plain water.
