Bourbon Biscuit Cake

I mean, the store is not a bad option, but sometimes the cakes available in the store are dried out and not the best quality. So, what is the solution? Bourbon biscuit cake!
This is such an easy cake that is super delicious and moist. You can make it in no time, and with only five ingredients, ganache included!
What Are Bourbon Biscuits?
Bourbon biscuits are some of the most famous biscuits, along with digestives and shortbread. Despite their name, there is no alcohol involved. Bourbon biscuits are simply sandwich chocolate biscuits with chocolate cream filling.
These biscuits are called Bourbon after the European house of Bourbon, which has nothing to do with liquor. These biscuits are apparently the 5th most popular biscuits in the UK for tea dunking.
What If I Don’t Have Bourbon Biscuits?
If you do not have Bourbon biscuits or you live in a country where you’d have to import them, you still can make this cake. Instead of Bourbon biscuits, choose another type of chocolate biscuit.
The closest ones, in my opinion, are Oreos. Although they are darker and thinner than Bourbon biscuits, they have great flavor and that is the most important thing. You can substitute Bourbon biscuits in equal amount with Oreos.
Cooking The Cake (Overview)
A Bourbon biscuit cake can be cooked in different ways. Here are some of the popular ones:
- Stove – Choose a large deep sauce pan. Grease the entire sauce pan with butter. Cut a piece of parchment paper and place it in the bottom of the sauce pan. Make your batter and pour into the sauce pan. Tap the sauce pan few times on the kitchen counter to remove any air bubbles. Heat a large skillet over medium high heat. Place the saucepan on the skillet and cover it with a lid. Cook the cake for 30 minutes on very low heat, over the stove. Insert a toothpick or a skewer to check. Allow cake to cool completely. Run a knife around the edges and invert the cake on a plate. Decorate as desired.
- Microwave – Pour the cake batter in a microwave-safe pie plate or container, greased with butter and with the bottom covered with parchment paper. Tap the container a few times to remove any air bubbles. Microwave for 5 minutes on high. Check the cake for doneness. Cool completely before removing from the container.
- Rice cooker or steamer – Pour the cake in a spring form, greased with butter and covered with parchment paper on the bottom. Prepare your steamer by pouring in 1 ½ cups of water. Insert a wire rack in your cooker or steamer. Place the cake on top of the rack. Steam the cake on low heat for 25 minutes. Cool completely before removing from the tin.
- Oven – This is a classic method I used for this recipe. Preheat your oven to 320°F. Pour the batter in a butter-greased cake tin, with the bottom covered with parchment paper. Tap the cake few times to remove any air bubbles. Cook the cake for 15 minutes. Cool completely before inverting on a plate.
Serving And Decorating
I personally love chocolate coating. You can just combine chocolate with butter and melt it in a microwave or over a stove.
Drizzle the chocolate over the cake and let it set. Instead of this, you can also make ganache. You can choose milk, dark, or even white chocolate.
The chocolate cake can be garnished as you desire. I always love fresh berries because they pair perfectly with chocolate. Instead of berries, you can add chocolate shavings, crushed Bourbon biscuits, or some shredded coconut.
To serve the cake, you can serve it as-is, or serve with some whipped cream or a scoop of vanilla ice cream on top.

Ingredients
- 5 packets of Bourbon biscuits, processed in a food processor
- 1 tsp baking powder
- 1 tsp bourbon vanilla powder (optional)
- 1 cup milk
- 2 tbsp butter, melted
For the chocolate coating:
- 1 tbsp butter
- 4 oz chopped chocolate
Instructions
1. Preheat oven to 320°F. Grease 8-inch spring form with butter. Cover the bottom with parchment paper.Â
2. In a bowl, combine biscuits, baking powder, and vanilla, if you’re using it.
3. Add milk and melted butter. Stir to combine until smooth.
4. Pour the batter into the spring form. Bake the cake for 15 minutes.
5. To make the chocolate coating, melt the butter and chocolate in a microwave. Stir well until combined.
6. Pour the chocolate over cake. Let it set in a fridge. Remove the cake from the spring form.
7. Slice and serve.
