It turns out that some manufactured sourdough bread may contain additional yeast and improvers to make the bread taste “better”. If you ask us, this is a direct violation of what sourdough bread stands for!
Sourdough bread is easy to make and you can get a much better and more personalized bread, one that even toasts well, at home rather than relying on the usual subpar commercial variety.
Here is how to make foolproof sourdough bread at home:
- 50-100 g (1⁄4 – 1/2 cup) – active starter
- 375 g (1 1/2 cups plus 1 tbsp) warm water
- 500 g (4 cups plus 2 tbsp) bread flour
- 9-12 g (1.5 – 2.5 teaspoons) fine sea salt
- In a large bowl, mix the starter culture and water, and then add flour and salt. Mix to combine until a dough starts to form. Cover the bowl and let it rest for about 30 minutes.
- Once the dough has risen, grab a corner of the dough and gently pull it up and bring it back to the middle of the dough. The idea here is to stretch and knead the dough so that it becomes softer and more textured when baked. Repeat this step at least 2-4 times (with 30-minute intervals). If you don’t have the time then you can only do this step once or twice. Each stretch and pull will benefit the dough!
- Cover the dough and let it rest for about 8 hours at 70°F. You may want to keep the bowl at a lower temperature if you already live in a hot environment.
- After the 8-hour mark, check the dough for signs of doneness. By now, the dough would have either doubled in size or risen to about 50%. Either condition is acceptable. We have found that the 50% risen dough has a better spring to it when baked than the double-sized dough, but you can choose either option as per your preference.
- Shape the dough by forming it into a rounded flat ball and then let it rest for another 30 minutes. In the meantime, prepare a proofing bowl by lining it with a clean towel and lightly dusting the surface of the bowl and towel with flour.
- Shape the dough as indicated in step 5 one last time before moving it into the lined bowl. Cover the dough and refrigerate it for at least 1-2 hours.
- While the dough is proofed for a final time, prepare the oven by preheating it to 550°F along with a baking pot.
- Once the dough has been proofed. Move the prepared dough to the preheated pot and using the tip of a razor blade, carefully and gently make an incision in the shape of an “X” on top.
- Lower the temperature to 420°F and bake for 45 minutes or until golden brown!
