For this to happen, it needs to be colonized by naturally-occurring yeasts. Some people help the process along by adding high-yeast ingredients such as apple peel.
If your sourdough starter starts to show signs of life, it will then need carefully nurturing—this is more like a pet than an ingredient! It will need to be kept at the perfect temperature, and fed with fresh flour every day.

For this, you have various options. You can set your machine to “dough only”, and allow it to knead the loaf and begin the proving process.
