Taco Bell Cheesy Roll-Up Recipe (Copycat)

There are so many goodies on the Taco Bell dollar menu, but I have to say the cheesy roll-ups are my favorite. It goes without saying that these are all about the cheese, but the spice blend is really what makes it!

In my recipe, I make them a bit more crispy, because I just love a little extra texture and crunch. Cheesy roll-ups are basically a delicious handheld quesadilla, perfect for an on-the-go snack!

I use butter for this recipe, but feel free to use olive oil if you’d like. Don’t forget to dip them in your favorite hot sauce or guacamole for some added flavor!

I’ve added the ingredients for you to make your own taco seasoning too if you wish. For this recipe, you will need a baking sheet or a skillet (depending on whether you are baking or frying them). 

Can I Add Other Ingredients To The Roll-Ups?

This is a pretty plain recipe since the roll-ups are on Taco Bell’s dollar menu, but feel free to spice it up by adding some protein like ground beef or chicken. You could even add tomatoes, lettuce, or cilantro too!

Can I Use Gluten-Free Tortillas?

If you need this to be a gluten-free recipe, you can definitely use gluten-free tortillas! If you decide to use corn tortillas, just make sure to soften them before rolling by microwaving them with a damp paper towel, or else they will break.

Siete has some great grain-free tortillas made with cassava or almond flour that would work great for this recipe as well. 

Is Pre-Shredded Cheese Better Than Blocks Of Cheese For This Recipe?

I’ll be honest here, I went with some pre-shredded cheese and a block of pepper jack, and it all worked out great and they tasted delicious so I wouldn’t worry too much about it.

I will say shredding mozzarella cheese is a little more difficult than the cheddar and pepper jack so I would go with pre-shredded mozzarella cheese for convenience. 

Are There Other Methods Of Cooking These?

I went and baked these roll-ups but you can definitely use an air fryer if you have one, and cooking them in a skillet would also work great!

Can I Use Store-Bought Taco Seasoning?

I’ve provided a recipe for homemade taco seasoning, but you can definitely use a store-bought one! However, if you do decide to make your own taco seasoning, you can make a larger batch so you can use it for several recipes. 

How To Make Taco Bell Cheesy Roll Up Recipe (Copycat)

Step 1

Assemble your ingredients.

Preheat the oven to 375°F.

Add all the spices to a small bowl and combine to make your taco seasoning. This can be kept in a jar for months on end just like a store-bought spice jar. 

Shred the cheeses if needed. I use a food processor with a grater attachment to save time.  

Brush the softened butter onto one side of all 6 tortillas.

Step 2

Sprinkle one layer of taco seasoning onto the tortillas.

Layer all three kinds of cheese onto the tortilla and then add another sprinkle of taco seasoning. 

Step 3

Roll up the tortillas, brush them with the last bit of butter, place them on a baking sheet, and bake for 10 minutes.

Make sure to flip them halfway through the baking time.

Step 4

Serve with your favorite salsa, hot sauce, or dip.
