Salmon Skin Chips Recipe

Salmon is just delicious in any form: baked, fried, breaded…I can’t get enough!

But what about the skin? This part of the fish can get ignored by home cooks, and discarded without being included in the meal. Some people don’t even know you can eat salmon skin in the first place!

I say home cooks because the professionals know how to use it in such clever ways! And, the most delicious way is to make salmon skin chips. 

Keep the salmon skin if you want to serve something really delicious and nutritious. Salmon skin should never end up in your garbage can because it has so much to offer!

Why Should I Keep The Salmon Skin?

The skin of salmon contains high concentrations (probably the highest of the entire fish) of healthy omega-3 fatty acids.

These fatty acids are beneficial to your health because they may help lower your blood pressure and even reduce the risk of heart diseases.

As you can see, skipping out this part of the salmon means you are missing out additional health benefits. 

How To Serve Salmon Chips

Salmon chips can be a crispy snack, but also a tasty addition to many meals.

Think adding salmon chips on top of your vegetable purees, on top of salmon cakes with some sour cream, or anywhere in salty dishes where you need some crunch.

Making Salmon Chips (Overview)

As with any dish, choose your ingredients wisely. In this case, choose your salmon wisely.

The way the salmon is raised has a huge impact on its quality, flavor, and benefits to your health. Farm-raised salmon has higher levels of harmful chemicals that come from industrial products. 

Ocean-raised salmon is the best option in general, not only for chips. 

Now, when you have your salmon, you need to skin it. There are two ways to skin the salmon fillet.

Method 1:

  1. Sprinkle the cutting board with some salt and place the salmon skin-side down on a cutting board. Holding down the tail, cut at a 45 degree angle, 2-inches into the skin, and not all the way through.
  2. This way, you will get a good grip. Continue to separate the skin with a fillet knife, all under 45 degrees angle. Hold your knife still, while you move your salmon, grabbing firmly by the piece you just prepared to be grabbed on.
  3. Make sure your cuts are smooth and even, pulling gently toward yourself, and going left and right, and try not to cut the flesh of the salmon. 
  4. Place your salmon flesh aside, and prepare the skin.

Method 2:

  1. The other method is to place the salmon on a wire rack in your sink. Bring water to a boil. Once boiling, gently pour the water over the salmon. Then, you just have to gently lift the skin and pull it off.

Once you have the skin, one way or other, gently cut the skin with a sharp knife or kitchen scissors into 1-inch-thick strips.

Pat dry the salmon with paper towels and season with desired spices. Afterwards, you can fry your salmon chips, or bake them in an oven on a baking sheet lined with parchment paper. 

Seasoning The Salmon Chips

This is the part where you can get as creative as you want. Use any seasoning you desire. You can choose classic salt and pepper, smoked or plain paprika, red pepper flakes, or some thyme for a Mediterranean touch. 

Tips For Extra Crunchy Chips

If you read the previous text, you already have a hint. Pat-dry your salmon with paper towels before any frying or baking.

You can even go step further; season your salmon skin with salt and let it sweat for few minutes, before you pat-dry the salmon again. This will ensure you have extra crispy chips.

How Much Salmon Do I Need?

Now, truth to be told, you will need a lot of salmon. For this recipe, I used skin from a 2.5lb salmon, and got a small bowl of chips.

It would be ideal if you could get more salmon skin. You can ask sellers on a fish market to give you skin from the salmon if they have any extra.

Preparation time: 10 minutes

Cooking time: 3 minutes

Servings: 1

Ingredients

  • 2.5lb. salmon, with skin on
  • Salt, as desired
  • ½ tsp paprika
  • Oil, for frying
  • Sesame seeds, to sprinkle, optional

Instructions

1. Place the salmon on a wire rack. 

2. Bring 2 cups water to a boil. Once boiling, remove from the stove and pour over the salmon skin.

3. Gently lift the skin and peel it away from the salmon.

4. Cut the skin into strips, around 1-inch thick or more, and pat dry with paper towels.

5. Season the salmon with salt, let sit for a minute, then pat dry.

6. Add paprika.

7. Heat 1-inch of oil in a skillet.

8. Add salmon chips and fry for 2-3 minutes. Remove the chips with a slotted spoon.

9. Sprinkle the salmon with sesame seeds and serve!

NOTE: You can also air-fry the salmon skin for 8 minutes, or bake in the oven for 10 minutes at 375°F.
