Powdered Peanut Butter Cookies

Peanut butter cookies are one of the most iconic cookies, just beneath chocolate chip cookies.

Making peanut butter cookies is super easy, and making them with peanut butter powder is even easier!

The classic peanut butter cookies are soft and chewy with noticeable fat content, but these are loaded with peanut butter flavor, minus the fat.

Peanut butter powder is a versatile ingredient that works perfectly in these cookies, making them suitable even for those who are looking for a healthier version of the classic peanut butter cookies.

What Is Peanut Butter Powder?

Powdered peanut butter is made from roasted peanuts that have been processed to remove the oil and then ground into a fine powder.

There are some brands that offer pure peanut butter powder, while others come with some salt or sweetener. 

With most of the fat gone, powdered peanut butter has about 85% less fat than regular peanut butter. This means that with the powdered peanut butter you are left with mostly protein and fiber. 

Cooking With Powdered Peanut Butter

Peanut butter is something I am always excited about. I love its flavor, its texture, and the fact that can be used in so many ways.

Peanut butter can also be used in the form of powder, or can easily be mixed with some kind of liquid, water or milk, to get a nice peanut butter spread. 

You can mix 4 tbsp of powdered peanut butter and 1 tbsp of water to get 2 tbsp of rich peanut butter spread. It will have the texture and flavor of classic peanut butter, minus the fat.

I’m not going to lie and say it’s better in flavor than the classic version, but the true value of peanut butter powder lies in its ability to meld with other ingredients. 

The powdery form allows it to be used in so many ways. When using peanut butter powder, I add it in smoothies, oatmeal, or breading (like peanut butter coated chicken), stir it in sauces and marinades, use in ice cream and cookies, and combine it into pies like peanut butter banana pie.

There are different recipes calling for peanut butter powder, and some require partial removal of the flour.

For some recipes, like this one, you can use peanut butter powder instead of flour, but for some, you will just substitute 1/3 part of the flour with peanut butter powder. 

There are so many ways to use peanut butter powder, and to me, this is its advantage over classic peanut butter. 

What Do These Cookies Taste Like?

These are absolutely fabulous cookies, with perfectly balanced peanut butter flavor.

At first glance, you may believe these will be loaded with peanut butter flavor, and maybe even a bit too much because they are made just with peanut butter powder, but believe me when I say they are just perfect.

I made these with a bit of orange extract just because I wanted to give them a twist, and it pairs wonderfully. Instead of orange extract, you can use vanilla or even banana extract. 

When it comes to texture, these cookies have a crispy, crunchy outer shell and edges, with a chewy center. They have all the properties a quality cookie needs.

Making The Cookies (Overview)

I have already said at the beginning that these are the easiest cookies to make. They require seven ingredients, and a single mixing bowl, and they are ready to be baked.

To make these you will start as usual: whisk together the liquid ingredients with sugar, fold in the dry ingredients, and shape the dough into balls.

As with any cookies, I like to chill these in a fridge for 30 minutes, so the flavors and ingredients can develop a bit better before baking. 

Once the dough is chilled, shape 2 tsp of the batter into a ball. Flatten each ball with a fork, making a crisscross pattern, and bake them for 12 minutes.

Fun fact: The crisscross pattern was invented by bakers, so people in their bakeries could identify easily which cookies are made with nuts, and therefore avoid allergies caused by the nuts. 

Powdered Peanut Butter Cookies Recipe

Preparation time: 10 minutes + inactive time

Cooking time: 12 minutes

Yield: 12 cookies

Ingredients

  • 1 cup powdered peanut butter powder
  • ¾ cup caster sugar
  • 1 tsp orange extract or banana extract
  • ¼ tsp baking powder
  • ¼ tsp salt
  • 1/3 cup oil
  • 1 egg
  • 1 tbsp ground flaxseed or powder flaxseeds

Instructions

1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

2. In a large mixing bowl, whisk egg, oil, orange extract, and sugar.

3. Fold in peanut butter powder, baking powder, and ground flaxseeds. 

4. Chill the dough for 30 minutes.

5. Shape the dough into 2 tsp balls and place on a baking sheet. 

6. Press each ball with a fork to flatten and create a grid pattern on each cookie. 

7. Bake the cookies for 12 minutes.

8. Cool them on a wire rack and serve.
