Now, I know what you’re thinking…how could you make food that resembles something so unappetizing? But what are you gonna do when the emoji just looks so cute? I simply had to!

Few days ago I was throwing a b-day party for my friend. It was a small circle of friends and everyone had to bring something hilarious.

I knew I had to make these as the ultimate joke. I can tell you my friends were kind of shocked at first, but then burst into laughter. They do bring a smile to everyone’s face.

After the initial laughter, the taste testing phase came, and even I was surprised at how good they tasted!

These cupcakes are very easy to make, but that does not affect their flavor. Just because they are easy does not mean they are less flavorful.

They are enriched with instant coffee granules which really gives them a rich flavor. These cupcakes are also moist and will stay that way even a day after baking!

What Makes These Cupcakes Moist?

I usually make cupcakes and muffins with butter, but this time I wanted to try oil.

I was inspired by Italian olive cake. I used vegetable oil, but you can use canola too. In addition to giving the cupcakes a nice, moist texture, using oil is much easier.

With the butter, you have to soften it and that takes time if you did not prepare it already.

Another ingredient that makes difference is buttermilk. If you do not have buttermilk, you can use plain milk instead.

Why I Use Instant Coffee Granules?

Chocolate by itself is a beautiful product in every aspect, but even something as perfect as chocolate can be elevated. One of the most common ingredients added to chocolate are salt, cardamom, and coffee.

There seems to be a natural draw attracting coffee and chocolate together, making them a fabulous pair. The warmth and bitterness of coffee paired with the sweet smoothness of chocolate is a match made in heaven.

Coffee truly enhances the flavor of chocolate by bringing a deeper and more fragrant element.

Both of these have a variety of unique flavors that are independently complex, and when paired together a delicious combination is made.

Can I Make Different Frosting?

These cupcakes are made with rich buttercream frosting. This is one of the most beloved and easiest frostings to find. It requires butter, powdered sugar, vanilla, and melted chocolate.

Still, sometimes I want to try something new, and I made these with a sour cream frosting. It’s just a nice contrast to dark and rich base of the cupcakes.

To make this frosting you will need to beat:

  • ½ cup sour cream
  • ½ cup butter
  • 3 cups powdered sugar
  • 8 oz melted chocolate
  • A small pinch of salt

This will be such a nice and refreshing addition to your cupcakes.

How To Decorate Cupcakes?

I’m sure you started thinking about this as soon as you saw the pictures. To decorate these there are different ways, some easier and some a bit more complicated. They are not complicated in execution, just time consuming.

Here are ideas on how to decorate the cupcakes (eyes and mouth):

  • The easies method is to buy candies shaped like eyes and a mouth. These can be found in candy stores or those who sell different pastry and dessert supplies. If you cannot find candies shaped like the mouth, you can cut out a piece of marshmallow and place on the frosting.
  • If you do not have access to these, you can make some from fondant. Roll out the fondant on a powdered sugar dusted kitchen counter, and cut out eyes and a mouth. Dip a small brush in an edible black color and draw the details.
  • A bit more time consuming is to make your own with chocolate. Melt the chocolate, white and dark, and make the mouth from the white chocolate. Make small blobs of white chocolate and place them in a freezer for few minutes. Drop some of the dark chocolate onto the white eye surface and pop in the freezer until ready to use.
