Chicken Hash Brown Casserole

Up until now I had loads of breakfast casserole recipes that I considered to be very good. Then I pulled this one from the oven.

This is the best breakfast casserole I have ever had, and I’ve had a lot! It has hash browns, chicken, and creamy toppings, plus some extra cheese on top! What’s not to love?

This golden delicacy is the perfect breakfast option because it comes together very easy and has enough flavor to satisfy any picky brunch-lover.

This casserole walks a delicious line between breakfast and brunch dish. There are many kinds of hash brown casseroles, but this one is yummiest!

What Is The Secret Of This Casserole?

This casserole is rich and creamy, and while other casseroles heavily rely on eggs for sliceability, here we lean on cream cheese and sour cream to make this casserole supremely sliceable. 

Ingredients

This casserole is primarily made with hash browns. There are many different options you can use.

For this one, I used my already pre-made hash browns, which I made a few days ago. Since I made a big batch, I kept these in a freezer in an airtight container. 

Instead of homemade hash browns, you can use the store-bought version. Patties or shredded hash brown potatoes are your best options. You can choose seasoned hash browns or plain ones. 

When it comes to patty-shaped hash browns or plain shredded, it is really a matter of preference. If you want, you can tear the patty shaped hash browns into pieces and get something a bit more similar to shredded hash browns.

Or, instead of that option, you can just layer them in a casserole dish as they are and top with a creamy chicken cheese mixture.

Speaking of the chicken, rotisserie chicken breasts are best, though you can also use any other part of the chicken. Cube it, shred it, or tear in into pieces. 

Can I Use Frozen Hash Browns?

As with any other ingredient, it is recommended to thaw hash browns before baking. Baking the hash browns from frozen will cause the heat to spread unevenly.

This it will prevent the casserole from cooking properly, leaving the inner part of the casserole uncooked. In addition, as they are frozen, some extra liquid may appear.

Add-Ins

This casserole is pretty basic but taste great. If you want to add something else, just to elevate flavors a bit, here are my suggestions:

  • Add colorful bell peppers. Chop a variety of bell peppers and layer them over the hash browns.
  • Add some chopped bacon on top. Cook the bacon and crumble it. Add the bacon over cooked casserole.
  • Instead of chicken, you can try to use cooked ground sausage. It will be a nice change if you want to try something new. 

Choosing The Right Cheese

There are different types of cheese you can use for casserole, but not all cheeses are the same.

When it comes to cheese, mozzarella is the undisputed king of meltiness. Mozzarella cheese has the ideal balance of moisture and elasticity. 

If you are considering some other type of cheese, like cheddar, I suggest you skip it. Cheddar cheese is a very popular part of many cheese blends, but I do not recommend using it alone.

Cheddar does not melt well compared to cheese like mozzarella or provolone. Still, if you want to use cheddar, stick with the younger varieties of cheddar since they maintain their moisture for longer during baking.

Chicken Hash Brown Casserole

Preparation time: 10 minutes

Cooking time: 30 minutes

Servings: 4

Ingredients

  • 15 oz hash browns, thawed
  • 2 cup rotisserie chicken, chopped
  • 1 cup shredded mozzarella
  • 4oz. cream cheese
  • ½ cup sour cream
  • ¼ cup water
  • ¼ cup melted butter
  • 1 tbsp ranch dressing mix
  • Salt, to taste

Instructions

  1. Preheat oven to 350°F.

2. In a large bowl, combine cream cheese, sour cream, butter, water, and ranch dressing.

3. Add in half the shredded cheese and chicken. Season to taste with salt. 

4. Tear the hash browns into pieces and place in a greased casserole dish. 

5. Top with the cream cheese mixture and cover with remaining shredded cheese.

6. Bake the casserole for 30 minutes.

7. Cool for 5 minutes before slicing and serving.

  • ½ cup sour cream

Instructions

Bake the casserole for 30 minutes.

Cool for 5 minutes before slicing and serving.
