Buffalo Chicken Grilled Cheese

Buffalo sauce is one of my favorite flavors of all time. It’s a little tangy and a little spicy, and so buttery with the perfect touch of vinegar!

I’m sure you’ve had buffalo sauce on plenty of chicken wings, but have you ever added buffalo sauce to your grilled cheese?

Well if you haven’t, I have the best grilled cheese recipe for you! And now that I’ve made this, I don’t think I can go back to regular grilled cheese again. It’s that good! 

For this grilled cheese, I went with orange sharp cheddar with some added blue cheese crumbles. What’s buffalo sauce without a little blue cheese?

I also added some chicken to take it to the next level. It’s so delicious, and it makes it more filling with the added protein, so it’s a win-win!

For this recipe, you will need a small mixing bowl and a skillet. A pancake griddle would also work great if you have one. 

What Is The Best Bread To Use For Grilled Cheese?

In my opinion, sourdough is always the way to go when it comes to grilled cheese. It has the perfect flavor, texture, and buttery crunch once cooked.

What If I Don’t Have Blue Cheese On Hand?

If you don’t have blue cheese, don’t worry! I think most cheeses would go really well with this sandwich. Gouda, pepper jack, and even mozzarella cheese would be great replacements. 

How Should I Serve It?

You can’t go wrong with a classic grilled cheese and tomato soup combo, but I will say I find serving this grilled cheese with a potato soup of some kind is especially delicious!

A pear and arugula salad would also be a great combo if you want to add some balance to the meal. 

What If I Don’t Have Celery Salt For The Buffalo Sauce?

You can replace regular salt with celery salt or even add a pinch of onion powder to the sauce as well. 

What If I Only Have Salted Butter For The Buffalo Sauce?

If you only have salted butter for the sauce, you will need to add sugar to it to balance out the saltiness. Start by adding one teaspoon of sugar at a time until the desired flavor is reached. Also, omit the celery salt from the recipe. 

How To Make Buffalo Chicken Grilled Cheese

Step 1

Assemble your ingredients.

Make the buffalo sauce by melting 1 stick of butter.

Step 2

Once the butter is melted, pour it into a mixing bowl and add the Frank’s hot sauce, white vinegar, and seasonings.  Whisk the sauce until combined. 

Turn a skillet on medium heat and start preparing the grilled cheese. Butter one side of each bread slice.

Step 3

Coat the chicken in buffalo sauce.

On one bread slice, using the back of a spoon, spread on a thin layer of buffalo sauce.

Step 4

Add a layer of cheese and the buffalo shredded chicken.

Step 5

Sprinkle the blue cheese on top. Feel free to add another layer of cheddar cheese if desired. 

Step 6

Add the sandwich to the skillet and cook until the bread is golden brown and crispy, about 3-5 minutes. Flip to the other side and cook for the same amount of time.

Serve with ranch dressing and more buffalo sauce for dipping and enjoy!

For today's recipe, we'll be making an incredibly delicious buffalo chicken grilled cheese that'll take your lunch to the next level!

Ingredients

For the sandwich

  • 1 shredded chicken breast
  • 6 slices sharp cheddar cheese
  • 2 tbsp crumbled blue cheese
  • 4 tsp butter 
  • Ranch dressing for dipping (optional)

For the buffalo sauce

  • ½ cup Franks hot sauce
  • 1 stick unsalted butter
  • 1 tbsp white vinegar
  • 1 dash cayenne pepper
  • 1 dash garlic powder
  • 1 dash celery salt

Instructions
