These almond butter cookies are the tastiest cookies you can find…also, these are ideal if you have a peanut allergy. 

Almond cookies are one of the best treats you can make for yourself. These are brilliant if you need a fast snack on the table, but also a healthier one than regular cookies.

Almonds are known to be a great source of protein, fiber, magnesium, and vitamin E. Almond butter made just with almonds carries these same benefits.

As almonds are a source of healthy fats, they may also bring benefits such as lowering blood cholesterol, and due to vitamin E, they may promote brain health.

Unlike the traditional nut-based cookies that are made just with three ingredients (sugar, eggs, and nut butter) these almond butter cookies have some flour in it.

We added flour just because we wanted to give you the best experience. Cookies with only three ingredients can somteimes have a sand-like texture and do not have a pleasant taste.

To make almond butter cookies with flour, you just need simple equipment such as bowls and a hand mixer, cookie sheet and a touch of love.

The ingredients are quite simple – you do not need anything special such as brown sugar or some special extract. The ingredients for these cookies are probably in your pantry and you can start making one today. 

Which almond butter to use?

As there are different types of almond butter the natural question is which to use? Go with plain almond butter and forget about versions with some chunks of almonds. So plain, smooth almond butter is quite fine.

Of course, you can use the butter made from the blanched almonds or butter made from regular almonds.

There won’t be much of a taste difference once they are baked, but cookies with blanched almond butter will be a little brighter.

Which flour to use?

Go with all-purpose flour. Do not use any self-raising flours or if you do, make sure you omit the leavening agent.

If you combine these two, you will end up with puffed cookies that will not have a great taste because of all that leavening agent.

So, good old-fashioned all-purpose flour is all you need. Of course, you can play with healthier versions and even use almond flour instead of the plain one. 

How to make the almond butter cookies?

The method is very simple. Firstly, you will have to combine the dry ingredients – flour and baking powder. If you want, you can add a pinch of salt – just to give a nice balance to the sweetness of the sugar.  This is not a mandatory step but can be included. 

As a next step, you will beat both types of butter (almond and plain) and sugar until fluffy. For this, you can use a hand mixer or if you have time and strong arms, a plain whisk.

Whisk in egg and vanilla and as the last step and gradually fold in the flour mixture. This is very important because if you add all the flour at once, it may not incorporate evenly and you will get cookies with some lumps of flour in them. 

Do almond butter cookies have a fork mark?

Fork mark or crisscross pattern is something that is added so people with a nut allergy can recognize which cookies have a nut butter. This is not a mandatory step, especially as these cookies have slivered almonds on top. 

Do I need slivered almonds?

If you cannot find one or bother to purchase one, just use chopped almonds. They really give a nice texture so it is a nice idea to use these.

Still, if you do not have any almonds, make that crisscross pattern because when baked it will give nice crispy edges.

How To Make Almond Butter Cookies With Flour

Preheat oven to 350F. Line a cookie sheet with a baking paper. 

Step 1: Gather your ingredients.

Step 2: In a bowl, beat almond butter, softened butter and sugar.

Step 3: Add egg and vanilla and beat until smooth.

Step 4: In a separate bowl, combine flour, baking powder, and salt if using.

Step 5: Gradually fold the flour mixture and stir until smooth. 

Step 6: Shape the cookies into balls (1 tbsp per cookie) and arrange on a baking sheet.

Add few slivered almonds on top and press them. Make sure you flatten the cookies to ¼-inch thick. 

Step 7: Bake the cookies for 10 minutes or until golden on top. Cool the cookies, then serve and enjoy.

Ingredients

  • 1 cups flour
  • ¼ cup almond butter
  • 3 tbsp softened butter
  • ½ cup sugar
  • 1 large egg
  • 1 pinch salt, optional
  • ½ tsp baking powder
  • ½ tsp vanilla extract
  • 2 tbsp slivered almonds

Instructions

Preheat oven to 350F.

Line a cookie sheet with a baking paper. 

In a bowl, beat almond butter, softened butter, and sugar.

Add egg and vanilla and beat until smooth.

In a separate bowl, combine flour, baking powder, and salt if using.

Gradually fold the flour mixture and stir until smooth. 

Shape the cookies into balls (1 tbsp per cookie) and arrange on a baking sheet. Add few slivered almonds on top and press them. Make sure you flatten the cookies to ¼-inch thick. 

Bake the cookies for 10 minutes or until golden on top.

Cool the cookies before serving.

Serve and enjoy.
